Jeera Rice

Ingredients:
Basmathi Rice ( 2 cups )
Jeera (cumin seeds) ( 1 tsp )
Onion ( 1/2 )
Green Chillies ( 3-4 )
Oil or Butter ( 1tsp )
Salt to taste
Cilantro to garnish

Preparation:

  • Soak Basmathi rice in water for 30 mins.
  • Cut the onion into thin slices,cut the green chillies in to round slices.
  • Take pan add oil or butter then add cumin seeds,onion,green chillies and fry for
    2 mins .
  • Add 4 cups of water let it boil for 5 mins,add salt to taste.
  • Then add the soaked rice and let it cook for 10 mins.
  • Garnish with cilantro,Jeera Rice is ready to serve.

Spinach Raitha ( Palak Raitha)

Ingredients:
Spinach (2 cups)
Mint (10-15 leaves)
Yogurt (1 1/2 cup)
water (1/2 cup)
Salt to taste
Cumin seeds (1/4 tsp)
Green chillies ( 2 )
Cooking oil (1tsp)


Preparation:

  • Take a pan add 1tsp oil , 1/2 tsp cumin seeds , 2 green chillies , Mint leaves ,
    2 cups fresh spinach leaves and cook for 5 mins till the spinach is cooked well.
  • In a add 1 1/2 cup of yogurt ,1/2 cup of water , Salt to taste beat it smooth.
  • Then add the cooked spinach and mix it well.
  • Serve palak raitha with fried rice.

Egg Masala


Ingredients:
Eggs (4-6)
Onion ( 1 )
Tomatoes ( 2 )
Ginger garlic paste ( 1/2 tsp)
Whole garam masala ( 2-3 cloves ,1 inch cinnamon stick , 2-3 cardamom)
Cumin seeds ( 1/4 tsp)
Mustard seeds (1/4 tsp)
Turmeric ( 1/4 tsp)
Red chilly powder ( 1 tsp)
Coriander powder ( 1tsp)
Salt to taste
Oil ( 2 tsp)
Cilantro to garnish


Preparation:

  • Boil the eggs , peal the shell and using a knife make few marks on the egg and keep them aside.
  • Take a pan add oil ,cumin seeds , mustard seeds , onion , turmeric , whole garam masala ,ginger garlic paste and fry for 2 mins.
  • Then add tomatoes fry for a min then add salt to taste , red chilly powder , Coriander powder and fry for 2 mins.
  • Add eggs and cook for 4-5 mins , garnish with cilantro.

Cilantro-Mint Chicken

Ingredients:
Chicken (3 lbs)
Chopped Cilantro (2 cups)
Chopped Mint (1/2 cup)
Green chillies (4-5)
Chopped Onion (1)
Chopped Ginger(1 inch stick)
Water (1 cup)
Oil (2-3 tbsp)
Cumin seeds (1/2 tsp)
Mustard Seeds (1/2 tsp)
Coriander powder (1 tsp)
Chopped garlic (2 tsp)
Turmeric (1/4 tsp)
Salt to taste
Plain yogurt(2-3 tbsp)

Fresh cilantro to garnish

Preparation:

  • In a blending jar add chopped cilantro(stem & leaves),Mint leaves,Green chillies,ginger and blend it smooth. Add 1/2 cup of water if needed.
  • In a pan add oil,cumin , Mustard seeds and cook for 30 secs.Add onion , chopped garlic , turmeric , coriander powder and fry for 2 mins.
  • Add chicken , salt to taste and let it fry for 2-3 mins,then add the mint and cilantro mixture and cook for 4-5 mins
  • Add yogurt, 1/2 cup of water and cook it until the chicken is fully cooked approx( 8 mins).
  • Garnish with fresh cilantro and serve hot with plain rice or fried rice.

Plantain Fry

Ingredients:
Plantains ( 2 )
Onion ( 1 )
Oil ( 2-3 tbsp )
Salt to taste
Red chilly powder ( 1tsp )
Coriander powder ( 1 tsp )
Cumin seeds ( 1/4 tsp )
Mustard Seeds ( 1/4 tsp )
Turmeric ( 1/4 tsp )
Cilantro to garnish

Preparation:

  • Cut the plantains into half and boil them for 8mins.
  • Peal the skin off and cut them into thin slices.
  • Take a pan add oil , cumin seeds , mustard seeds, onion , turmeric and fry until onion is transperent.
  • Add the plantian slices and fry them for about 5 mins until they are crispy , add 1 or 2 tsps of oil if needed.
  • Then add Red chilly powder, Salt to taste and coriander powder ,mix it well and fry for 2 mins.
  • Garnish with cilantro .Plantain fry is ready to serve, It goes well with white rice.
