Chicken Tortilla Soup

                                                                                                                                                                 
Ingredients:
Butter ( 2 tsp )
Onion ( 1/2 )
Jalapeno ( 1 )
Garlic ( 3 cloves)
Chicken broth ( 2 cans )
Black Beans ( 1 can )
Celery Sticks ( 2 )
Carrot ( 1 )
Green pepper ( 1 )
Rice ( 1/4 cup)
Left over Chicken ( 1/2 cup)
Tomato (1) (Optional)
Roasted Cumin powder ( 1 tsp)
Salt to taste
Red Chilly powder ( 1 tsp)
Water( 1 cup)( if required )
Avocado ( 1/2 )
Grated Cheese (1/2 cup)
Corn tortillas ( 2 )



Preparation:
  • Chop the onion, garlic , jalapeno , celery sticks,carrot, green pepper in to small pieces.
  • Soak the rice in water.Cut the tortillas in to thin slices and deep fry them in oil.
  • Take pan add butter onion,jalapeno,garlic ,carrot , green peppers and fry them for 2-3 mins.
  • Add  rice , beans , chicken , Tomato and fry for 2-3 mins.then add roasted cumin powder,salt to taste and red chilly power.Mix it well.
  • Now add chicken broth and cook for 10-15 mins add a cup of water if necessary.
  • Garnish with grated cheese ,fried tortillas and avocado.

Tom yum soup



Ingredients:
Chicken broth (1 tin)
Lemon grass ( 1 tsp)
Red chilli paste (1 tsp)
Green onions (1 cup)
Garlic (2 cloves)
Ginger (1 tsp)
Soy sauce (1 tsp)
Fish sauce (1 1/2 tsp)
lime juice (1 whole lime)
Mushrooms (3 to 4)
Shrimp/Chicken (3 to 4)
Cilantro


Preparation:
  • Heat pan,add chicken broth and 1/4 cup of water bring it to a boil.
  • Add finely chopped garlic , ginger,lemon grass.
  • After 2 mins add chopped mushrooms,red chilli paste,soy sauce and fish sauce.
  • Add green onions and lime juice.
  • Add shrimp to the soup and wait until shrimp turns pink then off the stove and add cilantro.

Egg Pulusu

Ingredients:
Eggs ( 6 )
Tamarind (Big lemon sized)
Green chillies ( 3 )
Red chilly powder ( 1 tsp )
Onion ( 1 Big )
Curry leaves (6-8)
Fenugreek seeds(Methi)(1/2 tsp)
Cumin (Jeera) (1 tsp)
Mustard seeds (1/2 tsp)
Ginger garlic paste (1/2 tsp)
Coconut powder ( 2 tsp)
Turmeric (1/2 tsp)
Salt to taste
Cooking oil ( 3 tsp)

Cilantro to garnish

Preparation:

  • Boil the eggs in water with a pinch of salt.
  • Peal the shell and make slits on the egg using a knife.
  • Soak the tamarind in water for about 15 minutes and extract juice from it.
  • Dry roast 1/2 tsp Methi seeds and 1/2 tsp cumin on low flame and grind them.
  • Take a pan add 1tsp oil, 1/2 tsp cumin seeds, green chillies and onion fry for 2-3 mins. Let it cool down and make paste of it.
  • Heat 2 tsp oil in a pan, add mustard seeds When they splutter add curry leaves.
    Add the onion paste and fry until it is reddish brown in colour.
  • Now add ginger garlic paste,turmeric,red chilly powder,jeera methi powder,salt to taste and fry for about 3 mins.
  • Add coconut powder and fry for 2-3 mins.Add eggs and fry for 2 mins then add Tamarind water and let it boil.
  • Cook for 8-10 mins ,Garnish with cilantro. Serve egg pulusu with hot steamed rice.

Radish Curry

Ingredients:

Radish (4-6)
Onion ( 1/2 )
Green chillies ( 3 )
Salt to taste
Oil ( 1tsp )
Mustard seeds ( 1/2 tsp)
Curry leaves (6-8)

Preparation:

  • Peal the skin of radish and grate them.Cut green chillies into half.
  • Take a pan add oil,when it is hot add mustard seeds,onion,green chillies,curry leaves and fry till they turn to golden brown.
  • Then add grated radish,salt and fry for 4-5 mins.Garnish with cilantro and its ready to serve with Chapathi or Steamed rice.

Plantain Curry


Ingredients:
Raw plantains ( 2 )
Channa dal ( 1/2 cup)
Coconut Powder ( 2 tbsp )
Green Chillies (5-6)
Onion ( 1 )
Turmeric (1/4 tsp)
Cumin seeds (1/2 tsp)
Mustard Seeds (1/2 tsp)
Oil (2-3 tbsp)
Cilantro to garnish
Salt to taste


Preparation:

  • Soak the Channa dal in water for 10-15 mins.
  • Boil the plantains in water for 5 mins then peel and slice into small cubes.
  • Grind the coconut powder, green chillies, a pinch of salt and make a paste.
  • Take a pan add oil , cumin seeds, mustard seeds , Onion and fry for 2 mins.
    Add Turmeric , Channa dal and fry for a min.
  • Then add the plantain cubes and fry for a 2-3 mins ,add the coconut chilly paste
    and mix it well add salt to taste.
  • Cook them covered for about 10-15 minutes.
  • Garnish with cilantro , its ready to serve with rice.

Deepawali ( Diwali )


Diwali is a "festival of lights" which is celebrated by Hindus. It symbolizes the victory of dharma, and good over evil.
The word is a variation of the Sanskrit word "Deepavali" and refers to the rows of earthen lamps celebrants place around their homes. 

Hindus believe that the light from these lamps symbolizes the illumination within the individual that overwhelms ignorance, represented by darkness.

Diwali is celebrated on the return of the avatar Lord Ram (the incarnation of Lord Vishnu), his wife Sita and brother Lakshman to their capital, Ayodhya, after 14 years of exile.The residents of Ayodhya, overjoyed at the return of their beloved king, lit lamps in his honor. Thus, the entire city looked like a row of lights.


 
The first day of the festival Naraka Chaturdasi marks the vanquishing of the demon Naraka by Lord Krishna and his wife Satyabhama. Amavasya, the second day of Deepawali, marks the worship of Lakshmi, the goddess of wealth in her most benevolent mood, fulfilling the wishes of her devotees.

Diwali is usually celebrated during the evenings with fireworks and diyas.
However, in Andhra Pradesh, the festivities start out at the crack of dawn and carry on well into the night. Most people make a trip to the local temple along with their families to seek the blessings of their respective Gods. The night sky is lit up with a scintillating array of noisy fireworks.


Homes are lit up with hundreds of diyas and colorful Diwali Rangolis (link) adorn the doorways.
Children get new clothes to wear, delicious food to eat and for once,they are allowed to make much noise.
Often beginning almost a month before Deepawali Sales of expensive silk saris, jewelry,
ornaments, and household goods increase. From the poor to the rich, everyone indulges in the largest shopping spree of the year. Sweets, which are an integral part of any festival in Andhra Pradesh, are prepared or purchased from shops.
Diwali is also called as Festival of Sweets.

Rava Kesari


Ingredients:
Upma Rava (1 cup)
Ghee( 3 tbs)
Sugar (1 cup)
Water (2 cups)
Cashew nuts (1 tbs)
Raisins (1 tbs)

Preparation:
  • Heat the pan,add ghee,cashew nuts and Raisins fry until brown.Add upma rava fry until lightly brown.
  • Add sugar into the rava and mix well for 1min.
  • Now pour water into the pan slowly by continuously stirring the rava.In 5 mins rava kesari is ready to eat.

Vermicelli Kheer


Ingredients:
Vermicelli (1/2 Cup)
Milk (1 cup)
Sugar(2-3 tsp)
Cashew
Kismis
Ghee or Butter

Preparation :

  • Roast the Vermicelli with ghee or butter in a pan until it is brown and keep it aside,then take one cup of milk in a container and boil them.
  • Add Vermicelli ,sugar and cook until the Vermicelli becomes soft approx 5-8 mins.
  • Roast Cashew and Kismis with ghee or butter in a separate pan ,add those nuts to milk then Its ready to serve.

Nan Khatai ( Biscuits )

Ingredients:

All purpose flour (1/3 cup)
Gram flour (besan) (1/2 cup)
Sooji (1/3 cup)
Butter( 1/2 cup)
Cardamon powder (1/2 cup)
Sugar (2/3 cup)
Baking soda (pinch)

Procedure:

  • In a bowl,mix the butter and sugar at room temperature until soft and fluffy.
  • In another bowl,mix all dry ingredients such as flour,besan,baking soda,sooji
    and cardamon powder mix them well.
  • Now slowly transfer the dry ingredients into the butter and sugar mixture slowly
    so that all the mixture is mixed thoroughly with the butter and form and dough kind of texture.
  • Now take small amounts of dough and make into small balls and flatten them in
    middle to form a biscuit shape.
  • You can garnish with any dry fruits in the middle of the biscuit.
  • Now preheat the oven to 350 degrees and place the tray of biscuits into the oven
    for 10-12 Min's or until lightly brown.
  • Cool them and munch with tea or coffee.
