Spinach Dip


Ingredients:
Spinach (2 cups)
Yogurt (1 1/2 cup)
Milk (1/2 cup)
Salt to taste
Black pepper (1/2 tsp)
Cumin seeds (1/4 tsp)
Red chillies ( 2 )
Cooking oil (1tsp)


Preparation:

  • Take a pan add 1tsp oil , 1/2 tsp cumin seeds , 2 red chillies , 2 cups fresh spinach leaves and cook for 5 mins till the spinach is cooked well.
  • In a blending jar add 1 1/2 cup of yogurt ,1/2 cup of milk , Salt to taste , black pepper ,cooked spinach and blend it smooth.
  • Spinach dip goes well with any crakers, bread and vegetables.

Coconut Rice


Ingredients:
Basmathi rice (2 cups)
Carrot (1/2 Cup)
Beans (1/4 Cup)
Green peas(1/2 cup)
Potato (1)
Onion (1)
Cloves (2-3)
Cinnamon( 1stick)
Cardamom (2-3)
Bay leaf ( 1 leaf)
Green Chillies (2-3)
Coconut Milk (1 Can)
Ghee or Butter or Oil (2 tsps)
Cumin Seeds ( 1/4 tsp)
Preparation:
  • Take a pan add ghee ,Cumin seeds ,Cloves, Cinnamon ,Cardamom ,Bay leaf, Green chillies, Onion and fry until onion is golden brown.
  • Add chopped carrot , chopped beans, chopped potato, green peas ,Salt to taste and fry for 2 mins.
  • Then add coconut milk and cook for a min .
  • In a electric rice cooker add the basmathi rice and water,Add the cooked vegetables into the rice and mix them well.
  • Switch on the rice cooker,mix the rice and vegetable for every 10 mins .After 20 mins Coconut rice is ready to serve.

Happy Ganesh Chaturthi (2011)

Ganesha Chaturthi also known as Vinayaka Chaturthi is the Hindu festival of Ganesha.
This festival lasts for 10 days.
Ganesha is widely worshipped as the god of wisdom, prosperity and good fortune and traditionally invoked at the beginning of any new venture or at the start of travel.

In Andhra, Kudumu (Rice flour dumplings stuffed with coconut and jaggery mixture), Vundrallu (steamed coarsely grounded rice flour balls), Panakam (jaggery, black pepper and cardamom flavored drink), Vadapappu (soaked moong lentils), Chalividi (cooked rice flour and jaggery mixture), Pulihora (Lemon rice or Tamarind rice) etc.. are offered to Ganesha along with Modakams. These offerings to god are called Naivedyam in Telugu.

This is our first Ganesh chathurthi in our new home.

Happy Ganesh Chaturthi (2011)


The main sweet dish during the Ganesh Chaturthi festival is the modak (modak in Marathi, modakam/kudumu in Telugu, modaka in Kannada and modagam in Tamil). A modak is a dumpling made from rice flour/wheat flour with a stuffing of fresh or dry-grated coconut, jaggery, dry fruits.It is either steam-cooked or fried.

This year i tried making Modak for the first time,as i didn't have modak mould the shape was not that perfect but the taste was really awesome.
