Cake


My cousin had a baby recently so to welcome the baby i thought of preparing a cake.As it was a baby boy i decorated the cake in blue edible paper resembling snow flakes just like winter.



The cake is a red velvet cake (My alltime favorite) with Vanilla frosting.

Kaddu Ki Kheer

 

Ingredients:
Grated Kaddu ( bottle gourd ) --- 2 cups
Milk --- 4 cups
Condensed Milk -- 1/2 cup
Sugar -- 1/2 cup
Powdered Cardamom –- 1/2 tsp
Dry fruits ( Almonds,Cashew nuts & raisins) - 1/2 cup
Green food color -- 2-3 drops (Optional)
Ghee or Butter --- 2 Tbsp

Preparation:
  • Start heating the milk in a pan on low flame, keep stirring.
  • Peal and remove the seeds from kaddu ( bottle gourd ) and grate it using a grater.
  • Then squeeze the water from the kaddu ( bottle gourd ) and keep it aside.
  • In a pan add ghee or butter then add dry fruits and fry for 2 mins.
  • Then add the grated kaddu( bottle gourd ) and cook for 3-4 mins.
  • When the kaddu( bottle gourd ) is cooked properly add hot milk after 2 mins add condensed milk and sugar.
  • Cook for 10-15 mins then add green food color(optional) and mix it well.
  • Refrigerate for 30 mins then Kaddu ki kheer is ready to serve.

Sambhar Rice


Ingredients:
Rice -- 2 cups
Split red gram -- 1 cup
Turmeric -- 1/2 tsp
Mustard seeds -- 1/2 tsp
Cumin seeds -- 1/2 tsp
Asafetida -- 1/4 tsp
Black peppercorns -- 1/2 tsp
Tamarind juice -- 2 cups
Tomato -- 1
Green chilles -- 2 or 3
Peas -- 1/2 cup
Potato -- 1
Eggplant -- 1
French beans -- 1/2 cup
Carrot -- 1/2 cup (optional)
Cashew nuts -- 10 to 12
Curry leaves -- 10 to 12
Coriander/Cilantro -- 1/2 cup
Sambar powder -- 2 tsps
Oil -- 2 tsp
Salt to taste

Preparation:
  • Take two pans and in the first pan start Cooking rice and split red gram in 5 cups of water,add salt and turmeric.
  • In another pan add oil or butter when the oil is hot add cumin seeds,mustard seeds,Asafetida,black peppercorns and cashew nuts fry for 2 mins.
  • Then add green chillies ,turmeric,potato,egg plant, french beans,carrots,green peas,curry leaves,tomatoes and cook for 5 mins.
  • Now add sambhar powder and Tamarind juice cook for 2-3 mins.
  • Add the half cooked rice and dal and let it cook for 10 mins.
  • Garnish with cilantro and serve sambhar rice with boondi or potato chips.
