Shrimp Fry


Ingredients:
Cooked Shrimp - 1lb
Onion - 1/2
Cumin seeds - 1/4 tsp
Mustard seeds - 1/4 tsp
Garam masala - 1/4 tsp
Turmeric - 1/4 tsp
Red chilly powder - 1 tsp
Coriander powder - 1tsp
Coconut powder - 2tsps
Salt to taste
Oil - 2 tsp
Cilantro to garnish

Preparation:
  • Wash the Shrimp and separate the tail from the body.
  • Take a pan add oil ,cumin seeds , mustard seeds , onion , turmeric, ginger garlic paste and fry for 2 mins.
  • Then add Shrimp fry for 5-6 mins.
  • Add salt to taste , red chilly powder , Coriander powder, garam masala ,coconut powder and cook for 5-6 mins.
  • Garnish with cilantro,Shrimp fry is ready to serve.

Mint (Pudina) Chutney



Ingredients:

Mint leaves (Pudina) - 2 cups
Dry red chillies - 5-6
Coriander seeds - 1 tsp
Cumin seeds - 1 tsp
Urad dal-1 tsp
Salt to taste
Tamarind - 1 inch piece
oil - 2-3 tbsp


Preparation:
  • Heat 1tbsp oil in a frying pan and add coriander seeds, cumin seeds, red chilies and urad dal and fry 2 mins.let it cool down.
  • Now add 1tbsp oil , mint leaves and tamarind to the same pan and cook it for 2-3 mins,keep stirring once it is cooked switch off the stove and let it cool down.
  • Now add salt and grind all the ingredients finely.
  • Spicy mint (pudina) chutney is ready it tastes great with rice.

Happy Sankranthi/Pongal (2012)


Sankranthi is a festival to celebrate the harvest and wish good luck for the new year and bestow happiness in life.


Sankranthi Rangoli is traditionally drawn in front of the house to stop new season germs from entering the home,these rangolis add color to your life . I have made an attempt to draw few rangolis in front of our home.

Paramannam (Sweet pongal)


Ingredients:
Rice - (1 cup)
Milk - (2-3 cups)
Sugar - ( 1/2 cup) / Jaggery - ( 1/2 cup )
Ghee - ( 2 tbsp )
Peanuts - ( 1/2 cup)
Cashew nuts - (1/2 cup)
Cardamom powder - ( 1/2 tsps )

Preparation:
  • Cook the rice with 1:3 ratio of water .
  • Dry roast the peanuts, grind them and keep them aside.
  • Roast the cashew nuts in ghee and keep them aside.
  • Add milk and sugar/jaggery to the cooked rice and cook it for 8-10 mins.
  • Add Cardamom powder and peanut powder and mix it well.
  • Garnish with roasted nuts and ghee ,Sweet pongal is ready to serve.

Tri-Color-Pasta

Ingredients :

Tri color pasta ( 1 box )
Olive oil (1 tsp)
Red onion ( 1/2 )
Red bell pepper  ( 1 cup )
Yellow bell pepper ( 1 cup )
Broccoli  ( 1 cup)
Cheese ( 1/2 cup )
Black Pepper (1/4 tsp)
Salt to taste
 
Preparation:
  • Boil water in a large pan add pasta to the water mix it well and cook it for 8-10 mins or until the pasta is soft.
  • Drain the water from pasta and let it cool down.
  • In another pan add oil  ,red onion and fry for a min .
  • Then add red, yellow peppers and broccoli ,let it cook for 2 mins .
  • Now add pasta and mix it well, add salt to taste and black pepper.
  • Cook for 2-3 mins and transfer it in to an oven safe pan and sprinkle cheese on it.
  • Pre heat the oven for 5 mins and on 350 degrees cook the pasta for 5-8 mins .
  • Now Tri-color pasta is ready to have.
