Chuduva (Poha snack)



Chuduva / Atukula Chuduva is a snack made with poha (Atukulu) its easy to prepare ,tastes awesome and stays fresh for a month if it is properly stored in an airtight container.This is a quick snack for kids they love it.

Ingredients: Thin Poha (Atukulu) - 1 Pound/ 1/2 kg

Puffed rice (Maramaralu) - 2 cups
Peanuts - 1/4 cup 
Red Chillies - 4
Green chillies - 4
Cashew nuts - 2 tbsp (optional)
Roasted Channa dal(Putnalu/Daliya)-2 tbsp
Curry leaves - 8-10
Cumin seeds - 1/2 tsp
Oil - 4 tbsp
Salt to taste
Turmeric powder - 1/4 tsp
Haldirams mixture - 2 Cups (Optional)

Preparation:

  • Take a wok add 2 tbsp oil,on medium heat roast poha and puffed rice for 2-3 mins.
  • Then transfer them to a big bowl.
  • In the same wok heat 2tbsp oil and add cumin seeds, Peanuts, cashew nuts, Red Chillies, Green chillies, Roasted Channa dal (Putnalu),Curry leaves,Turmeric powder and Salt to taste ,fry for 2 mins.
  • Now add roasted poha and puffed rice and mix it properly for 2mins.
  • Transfer to an airtight container and let it cool down,now add haldirams mixture and mix it properly.
  • Chuduva is ready to serve.

Its a red velvet cake covered with homemade marshmallow fondant and decorated with gum paste Roses and Calla lilies,
This cake is for my cousin's son Aarush 8th month b'day.

Medu Vada



A traditional urad dal based fried snack, medu vada is a south indian cuisine delight. The medu vada is best paired with sambhar and coconut chutney as breakfast or snack .

Ingredients:

White urad dal  - 2 cups

Finely chopped  green chillies - 5- 6
Finely chopped onion - 1 (small)
Cumin seeds - 1 tsp
Grated ginger - 1tsp
Curry leaves - 8-10
Asafoetida (hing) - 1/4 tsp (optional)
Salt to taste
oil for deep frying

Preparation:

  • Wash and soak  urad dal in enough water for 5-6 hours.
  • Drain and blend in a mixer into a smooth batter.
  • Transfer in a bowl, add the green chillies, chopped onion,cumin seeds,ginger and curry leaves and mix well.
  • Heat oil in a kadhai, wet the palms and take some batter and flatten to a round shape.
  • Make a hole at the center with your thumb and slowly slide into the hot oil.
  • Deep fry till they turn crisp and light golden brown.
  • Repeat the same to make  more vadas
  • Drain on an absorbent paper and serve hot with chutney  and/or sambhar .

Disney Princess Belle Cake






Disney Princess Belle Cake



I always thought of making a Barbie doll Cake but what better occasion than a 3yr old girls birthday .So i started of baking the cake in a wonder mould pan which would be the skirt of the Princess.




As this is Princess Belle Cake i used yellow fondant for decoration.
You can buy a full barbie doll or a barbie doll cake topper,in this case i used barbie doll cake topper which went on top of the cake that i have baked giving you the raw shape of the princess.I decorated the barbie bodice with fondant.



Now the real fun part of the cake decorating starts...i used leaf cutter for the under skirt, Wilton molds and blossoms for the design on the skirt. I used fresh brush and edible glitter, or luster dust! I brushed it all over the skirt & bodice It adds that final  shine/glow to the dress. 


I am really happy the way Princess Belle Cake turned out and everyone at the party loved the cake but seeing the glow in the birthday girls face was priceless.
