Ingredients:
Pasta (whole grain spaghetti) - 12 oz
Ripe Avocados --2 (pitted and scooped)
Fresh basil - 1cup
lemon - 1
Olive oil - 1tbsp
Garlic - 2 cloves
Black pepper - 1/4 tsp
Salt to taste
Milk - 1/2 cup
Grated Parmesan (optional)
Preparation:
- In a medium-sized pot of water add 2-3 drops of oil and let it boil. Add pasta, reduce heat slightly and cook for 8-10 minutes.
- In a food processor, combine scooped avocados, lemon juice, garlic, olive oil, basil ,milk ,black pepper and salt. Blend until smooth and creamy.
- Transfer cooked pasta to a bowl and toss with avocado mixture , Serve with grated Parmesan, if desired.
- Enjoy yummy and creamy avocado pasta as soon as it’s done.
