Green pepper ( 1 )
Rice ( 1/4 cup)
Left over Chicken ( 1/2 cup)
Tomato (1) (Optional)
Roasted Cumin powder ( 1 tsp)
Salt to taste
Red Chilly powder ( 1 tsp)
Water( 1 cup)( if required )
Avocado ( 1/2 )
Grated Cheese (1/2 cup)
Corn tortillas ( 2 )
Preparation:
- Chop the onion, garlic , jalapeno , celery sticks,carrot, green pepper in to small pieces.
- Soak the rice in water.Cut the tortillas in to thin slices and deep fry them in oil.
- Take pan add butter onion,jalapeno,garlic ,carrot , green peppers and fry them for 2-3 mins.
- Add rice , beans , chicken , Tomato and fry for 2-3 mins.then add roasted cumin powder,salt to taste and red chilly power.Mix it well.
- Now add chicken broth and cook for 10-15 mins add a cup of water if necessary.
- Garnish with grated cheese ,fried tortillas and avocado.
