Sprouted Green Bean & Avocado Salad



Ingredients:
Sprouted Green Bean (green moong) - 1 cup
Chopped tomatoes - 1/2 cup
Chopped cucumber - 1/2 Cup
Chopped red onion - 1/4 cup
Grated Carrot - 1/2 cup
chopped Avocado - 1
Chopped cilantro - 2 tbsp
Roasted cumin powder - 1/2 tsp
Lemon juice - 1 tsp 
Black pepper -1/4 tsp
Salt to taste
Olive oil - 1 tsp

Preparation:
Mix all the ingredients in order and toss it well.
Serve and enjoy the healthy Sprouted Bean and Avocado Salad.


How to make sprouts:

  • Soak the whole green bean (moong dal) overnight.After soaking moong dal, it will double in volume.
  • Line a colander with muslin cloth. Drain the water and loosely wrap the beans with the muslin cloth. 
  • Store the soaked beans in a warm dark place like a closed oven or cover with a heavy cloth. Within a day the beans will be sprouted. 
Note: To skip Salt & Pepper i used Salt-Free Mrs Dash Seasoning Blend.
