Wilton Gum Paste & Fondant (Course 3 ) Final Cake
I completed my Gum paste and Fondant class today .This is a pineapple cake covered with butter cream icing and
pink fondant decorated with Gum paste flowers & leaves.On the side its eyelet border and on bottom its
ruffle border.

Mint Lassi
Ingredients:
Yogurt - 2 cups
Mint leaves - 1/4 cup
Lemon Juice - 1 tsp
Roasted cumin powder - 1/2 tsp
Salt to taste
Ice cubes - 5-6
water - 1 cup
Preparation:
- In a Blender process all ingredients until smooth, don’t over bend as it will become frothy.
- Pour it over ice cubes and garnish with roasted cumin powder and mint leaves and enjoy your Mint lassi.

Cold Coffee with Ice Cream
Ingredients:
Milk - 1 Cup
Instant coffee powder -1 tbsp
Sugar - 3tbsp
Ice Cubes - 2 cups
Preparation:
- Blend the coffee, sugar and milk together for about 30 seconds until the sugar and coffee are mixed well with milk. Add ice and blend at a high speed for a minute until coffee becomes frothy.
- Serve the cold coffee with a scoop of vanilla ice cream and shaved chocolate turning the cold coffee into the dessert.

Gulab Jamun
Ingredients:
Gulab jamun mix
Milk - 1/2 cup (approx)
water - 4 cups
Sugar - 1 1/2 cup
Cardamom powder - 1/4 tsp
Cashew nuts(optional) - 20
Oil/butter/Ghee -- for deep fry
Preparation:
- Heat water add sugar and stir it continuously for 5-10 mins.Add cardamom powder to the syrup.
- Take a large bowl , for every 1 cup of jamun mix add 1/3 cup of water/milk.
- Mix gently and make dough with out lumps ,keep it aside for 5 mins.
- Apply 2-3 drops of oil to hands and start making small round balls out of the dough.
- Insert cashew nuts while making the round balls.
- Heat oil / butter, deep fry the jamuns on medium heat till they turn golden brown.Keep them on the paper towel for a min.
- Insert the jamun balls in the warm syrup.
- Allow syrup to be absorbed,then its ready to serve.

Quinoa Dosa
Ingredients:
Quinoa -- 1 cup
Brown Rice -- 1/2 cup
Urad dal -- 1/2 Cup
Salt to taste
Green chillies -- 2
Chopped onion -- 1/2 (optional)
Cilantro to garnish (optional)
Brown Rice -- 1/2 cup
Urad dal -- 1/2 Cup

Oil -- 2-3 tbsp
Preparation:
- Soak urad dal and brown rice for 4hrs & quinoa for an hour.
- Grind the soaked dal,brown rice,quinoa,green chillies and salt into fine paste.
- Heat dosa pan,add oil pour the batter in round shape like dosa.
- Sprinkle chopped onions & chopped cilantro on top, cook for a min.
- Wait till golden brown in color and its ready to serve.
- Serve hot quinoa dosa with red bell pepper chutney, peanut chutney or coconut chutney.

Wilton Flowers and Cake design ( Course 2 ) Final cake
I completed my flowers and cake design class today .This is an orange cake covered with butter cream icing and decorated with royal icing flowers.On the side its basket weave,on bottom its shell border and on top its reverse shell border.
All the flowers Roses , daisies, daffodils,violets,Apple blossom, primrose are made of royal icing , Butterflies are also made of royal icing and painted with luster dust.

Roses are my all time favorite flowers ,Can you believe these are edible ?
These pretty pink roses are made of gum paste.Its quite easy to make but should handle carefully when they are dry.
Calla lily is one of the easiest flower to make ,it is made of gum paste.
Here are the flowers which i made in Wilton course 3 ,all the flowers and leaves are made of gum paste.Orange flower is a mum and white flower is Carnation.

Mint Lemonade
Ingredients:
Lemon juice - 6tsp
sugar - 8 tsp
Fresh mint leaves -1/4 cup
Salt to taste
Grounded black pepper -1/2 tsp
cold water - 4 cups
Mint leaves to garnish
Ice cubes - 6-8
Preparation:
- In a Blender add mint leaves, lemon juice, sugar, salt and black pepper and blend together.
- Mix the mixture with water and pour the Mint Lemonade over ice cubes.
- Garnish with mint leaves and enjoy chilled Mint Lemonade on hot summer day.
