Vegetable Quinoa soup is healthy and yummy.you can add vegetables of your choice.
This is a great idea for dinner on cold nights.
Ingredients:
Olive oil - 2 tsp
Onion - 1/2
Jalapeno - 1
Garlic - 3 cloves
Veg broth - 2 cans
Black Beans - 1 can
Chopped Carrot - 1/2 cup
Green & red pepper - 1 cup
Green beans - 1/2 cup
Quinoa - 1 cup
Roasted Cumin powder - 1 tsp
Red chilly powder- 1/2 tsp
Salt to taste
Water- 1 cup,if required
Preparation:
- Wash and Soak Quinoa in water,keep aside.
- Take a pan add olive oil onion,jalapeno,garlic fry for a min.
- Then add carrot , green peppers,red peppers.green beans and fry for 2-3 mins.
- Add Quinoa , black beans and cook for 2-3 mins.
- Then add roasted cumin powder,salt to taste and red chilly power,mix it well.
- Now add veg broth and cook for 10-15 mins add a cup of water if necessary.
- Quinoa Soup loaded with vegetables is ready to serve.
