Veg Quinoa Soup



    Vegetable Quinoa soup is healthy and yummy.you can add vegetables of your choice.
    This is a great idea for dinner on cold nights.

Ingredients:

Olive oil - 2 tsp
Onion - 1/2
Jalapeno - 1
Garlic - 3 cloves
Veg broth - 2 cans
Black Beans - 1 can
Chopped Carrot - 1/2 cup
Green & red pepper - 1 cup
Green beans - 1/2 cup
Quinoa - 1 cup
Roasted Cumin powder - 1 tsp
Red chilly powder- 1/2 tsp
Salt to taste
Water- 1 cup,if required


Preparation:

  • Wash and Soak Quinoa in water,keep aside.
  • Take a pan add olive oil onion,jalapeno,garlic fry for a min.
  • Then add carrot , green peppers,red peppers.green beans and fry for 2-3 mins.
  • Add  Quinoa , black beans and cook for 2-3 mins.
  • Then add roasted cumin powder,salt to taste and red chilly power,mix it well.
  • Now add veg broth and cook for 10-15 mins add a cup of water if necessary.
  • Quinoa Soup loaded with vegetables is ready to serve.

Roasted Red Pepper & Potato Soup

Ingredients:
Red bell peppers ( 4 )
Onion,chopped ( 1 Medium )
Potato, peeled and diced (1 cup)
Garlic Cloves ( 2-3 )
Chicken stock or vegetable stock ( 1 can )
Cream or milk (1/4 cup)
Butter ( 2 tbsp)
Salt to taste
Pepper to taste


Preparation:
  • Roast the red bell peppers by placing them over  an open flame until they blacken on all sides. (You can use a grill, cook top gas burner, or oven broiler.) Place the blackened peppers in a bag, close the bag and let the peppers steam for 10-15 minutes. Remove the peppers from the bag, peel off the blackened skins, remove the seeds and chop the peppers .
  • Heat the butter in a large soup pot on medium heat. Add the chopped onion and saute for 2-3 minutes, stirring occasionally. Add the potatoes and cook another 2 minutes, then add the garlic and roasted peppers. Stir well and cook for 2-3 minutes.
  • Now add the stock, stir well and  cook on medium heat until potatoes are soft.
  • Puree the soup in a blender until very smooth.Do it in batches and remember to hold the cap tightly.
  • Add the soup in the soup pot set on low heat. Add the cream, stir well add salt and pepper to taste.
  • Serve the hot roasted red pepper and potato soup with some croutons.

Veg Chilly Soup



Ingredients:
Chopped Onion ( 1/2 )
Chopped Carrot ( 1 )
Chopped Green Capsicum ( 1 )
Chopped Yellow Capsicum ( 1 )
Chopped Zucchini ( 1 )
Finely chopped Garlic (2 cloves)
Red Kidney beans ( 1 can)
Garbanzo beans (1 can)
Tomato Puree ( 1 can )
Chopped Tomatoes (2)
Dry basil (1 tsp)
Salt to taste
Red chilly powder ( 1 tsp)
Roasted cumin powder ( 1 tsp)
Oregano (1/2 tsp)
Water ( 1 cup )
Olive Oil - 2 tsp
Chopped Cilantro ( 1 tbsp)
Lime (1/2)


To garnish :

Sour Cream
Shredded Cheese

Preparation:
  • Heat the soup pot add olive oil,onion,garlic,Carrot,zucchini,Green and yellow capsicum fry for 2-3 mins.
  • Then add red chilly powder,cumin powder,dry basil and Oregano cook for 2 mins.
  • Add tomato puree cook for 2 mins then add red kidney beans,garbanzo beans,chopped tomatoes,salt to taste.
  • Add water and cook for 20-25 mins on low flame mix well for every 4-5 mins.
  • Add cilantro and lime juice and mix it well.
  • Serve the soup with sour cream and shredded cheese.

Chicken Tortilla Soup

                                                                                                                                                                 
Ingredients:
Butter ( 2 tsp )
Onion ( 1/2 )
Jalapeno ( 1 )
Garlic ( 3 cloves)
Chicken broth ( 2 cans )
Black Beans ( 1 can )
Celery Sticks ( 2 )
Carrot ( 1 )
Green pepper ( 1 )
Rice ( 1/4 cup)
Left over Chicken ( 1/2 cup)
Tomato (1) (Optional)
Roasted Cumin powder ( 1 tsp)
Salt to taste
Red Chilly powder ( 1 tsp)
Water( 1 cup)( if required )
Avocado ( 1/2 )
Grated Cheese (1/2 cup)
Corn tortillas ( 2 )



Preparation:
  • Chop the onion, garlic , jalapeno , celery sticks,carrot, green pepper in to small pieces.
  • Soak the rice in water.Cut the tortillas in to thin slices and deep fry them in oil.
  • Take pan add butter onion,jalapeno,garlic ,carrot , green peppers and fry them for 2-3 mins.
  • Add  rice , beans , chicken , Tomato and fry for 2-3 mins.then add roasted cumin powder,salt to taste and red chilly power.Mix it well.
  • Now add chicken broth and cook for 10-15 mins add a cup of water if necessary.
  • Garnish with grated cheese ,fried tortillas and avocado.

Tom yum soup



Ingredients:
Chicken broth (1 tin)
Lemon grass ( 1 tsp)
Red chilli paste (1 tsp)
Green onions (1 cup)
Garlic (2 cloves)
Ginger (1 tsp)
Soy sauce (1 tsp)
Fish sauce (1 1/2 tsp)
lime juice (1 whole lime)
Mushrooms (3 to 4)
Shrimp/Chicken (3 to 4)
Cilantro


Preparation:
  • Heat pan,add chicken broth and 1/4 cup of water bring it to a boil.
  • Add finely chopped garlic , ginger,lemon grass.
  • After 2 mins add chopped mushrooms,red chilli paste,soy sauce and fish sauce.
  • Add green onions and lime juice.
  • Add shrimp to the soup and wait until shrimp turns pink then off the stove and add cilantro.

Tomato Basil Soup


Ingredients:
Finely chopped Garlic ( 1 tsp )
Finely chopped Ginger ( 1 tsp )
Finely chopped onion ( 1/2 )
Finely chopped celery (1/4 cup)
Diced Tomatoes ( 2 cups )
Fresh basil ( 1/2 cup ) or Dry basil (1 tsp)
Cooking oil (2 tsps)
Corn starch ( 1tbsp )
Red chilly powder (1/2 tsp)
Black pepper (1/2 tsp)
Salt to taste
Veg stock ( 2cups)

Preparation:

  • Take a pan,add Oil , finely chopped garlic , finely chopped ginger and finely chopped onion and saute for 2-3 mins.
  • Add Celery ( optional ) then add diced tomatoes,Basil , salt , red chilly powder and cook for 5 mins .
  • Let it cool down add the cooked tomato mixture in a blending jar and blend smooth.
  • In a small bowl add 2-3 tbsps of water and 1 tbsp corn starch.
  • In the same pan add the smooth tomato mixture and add veg stock and cook for 2 mins.
  • Add 2 tbsps of water and con starch mixture , 2 tsps of tomato ketchup , black pepper 2 tbsps of cream (optional) and cook for 2-3 mins.
  • Garnish with cilantro ,you can add croutons or rusk biscuits on the top.Tomato soup is ready to serve.

Spinach Soup


Ingredients:
Spinach (2 bunches)
Water Cress (1 bunch)
Potato (1 medium potato)
Onion (1 medium onion)
Salt to taste
Pepper powder

Preparation:

  • Heat the pan with butter or oil(1tbs),add chopped potato and onions fry them until they are translucent.
  • Add salt and crushed pepper.
  • Add watercress and spinach into the pan and let it cook for 5 mins.
  • Blend the mixture into fine paste by adding hot water.If you want the soup thick add less hot water.
  • Serve the soup hot with little sour cream on top or yogurt to go healthy.

Creamy Potato Soup


Ingredients:
Dry basil ( 1tbsp)
Shredded Cheese( 1 cup)
Butter ( 1/2 stick )
Red Potatoes ( 5-6 small)
Celery ( 2 sticks)
Carrots ( 2 )
Onion ( 1/2 )
Garlic paste ( 1 tsp)
Heavy cream ( 2 cups)
Chicken broth or Veg broth ( 5-6 cups)
Salt to taste
Black pepper ( 1/2 tsp)

Preparation:

  • In a pan add butter,onion,carrot, celery ,basil , garlic paste, potatoes and salt to taste ,cook for 3 mins.
  • Add Chicken broth or Veg broth and cook for 10 mins then add heavy cream and cheese.
  • Cook for 4-5 mins ,sprinkle fresh black pepper and Creamy potato soup is ready to serve.

Veg Noodle Soup



Ingredients:
Pasta- 1 cup
Finely chopped Onion ( 1/2 )
Finely chopped Carrot ( 2 )
Finely chopped Cabbage ( 1/2 cup)
Finely chopped Green beans (1/2 cup)
Finely chopped Garlic (1 clove)
Finely chopped Celery (1/2 cup)
Finely chopped Potato ( 1 small )
Tomato Puree ( 1 cup )

Fresh basil (1/2 cup ) or dry basil (1 tsp)
Salt to taste
Red chilly powder ( 1/2 tsp)
Pepper powder - ( 1/4 tsp)
Water or Veg stock ( 2 cups )
Oil - 2 tsp
Cilantro

Preparation:

  • Heat oil in a pan and saute pasta, onions, celery and garlic for 2 mins.
  • Add all the other vegetables and cook for 2-3 mins.
  • Add Salt , Red chilly powder ,basil ,Tomato puree and let it boil.
  • Then add water or Veg stock,pepper powder and cook for 10 mins ,mix them well for every 3-4 mins.
  • Garnish with cilantro and serve hot.
Note: Skip few vegetables if you don't have.

Minestrone Soup

Ingredients:
Onion (1 whole)
Cabbage(1 cup of chopped cabbage)
Carrot (1 cup carrot)
Potato (1 cup)
Celery(1 cup)
Garlic(2 cloves)
Oil (1 tsp)
Butter (1 tsp)
Tomato (3 tbs)
Veg stock/chicken stock (1 tin)

Preparation:

  • Heat medium size pan, with butter and oil add garlic and all vegetables(onions,cabbage,potato,celery,carrot).
  • Let all vegs cook for 5 mins,then add tomato paste with little water and let cook for 3 mins.
  • Add salt and pepper and stir the soup.
  • Add veg stock into the vegs and stir the soup and let it cook for 10mins.

Hot & Sour Veg Soup

Ingredients:
Finely chopped garlic (1tbsp)
Finely chopped ginger (1tbsp)
Finely chopped Onion (1 cup)
Finely chopped celery (1/4 cup)
Finely chopped Carrot (1/4 cup)
Finely chopped green beans (1/4 cup)
Finely chopped cabbage (1/2 cup)
Finely chopped cauliflower(1/4 cup)
Finely chopped capsicum (1/4 cup)
Finely chopped spring onion.
Soy Sauce ( 2-3 tbsp)
Chilly Sauce(2-3 tbsp)
Vinegar
Corn starch (2-3 tbsp)
Pepper powder
Vegetable stock
Cooking oil

Preparation:
  • Take a pan add 2tsps oil , garlic , ginger , celery ,onion fry for a min.
  • Add carrot , green beans ,cabbage , capsicum , cauliflower fry for 2 mins.
  • Mix Corn starch in 1/2 cup water and keep aside.
  • Add 3-4 cups of vegetable stock ,Salt to taste, Chilly sauce ,Soy sauce,Vinegar, let it boil.
  • Add the corn starch water and mix it well add pepper powder, let it boil for 2-3 mins.
  • Garnish with spring onion,Hot & Sour soup is ready to serve .

Serve with : Green chillies in vinegar , Tomato ketchup , Chilly Sauce , Soy sauce.

Vegetable stock preparation:

  • Boil any vegetables , 2-3 whole garam masala in water for 5 mins,remove the vegetables.
  • The water is vegetable stock , you can freeze the stock in ice tray and use the veg stock blocks when ever you make soups.

Vegetable Corn Soup


Ingredients:
Corn (2 cups)
Chopped carrot (1/4 cup)
Chopped beans (1/4 cup)
Chopped cabbage (1/4 cup)
Chopped cauliflower (1/4 cup)
Black pepper
Salt to taste
Vegetable Stock(2 cups)
Corn starch (2tbsp)
Chopped Spring onion

Preparation:
  • Boil corn in water for 5 mins,make fine paste of half amount of corn.Keep the other half amount of corn and water aside.
  • In another pan add 1tsp oil , chopped carrot , chopped beans , chopped cabbage , chopped cauliflower Salt to taste and fry for 2-3 mins.
  • Add the corn, corn boiled water and vegetable stock and cook it for 2 mins.
  • In a small bowl add corn starch in some water and mix it thoroughly.
  • Add the corn paste and corn starch water and cook for 2 mins.
  • Add pepper and salt to taste,garnish with spring onion.

Serve with : Green chillies in vinegar , Tomato ketchup , Chilly Sauce , Soy sauce.

Vegetable stock preparation:
