Veg-Quinoa-Dal



Quinoa Nutrition is a new way to add a healthy food to your meals to help you live a healthier life style without sacrificing taste.So we decided to substitute Quinoa with rice at least twice a week. I tried this recipe and its yummy like rice and dal.
Veg-Quinoa-Dal is a quick and healthy recipe for dinner specially for kids its yummy and easy to eat.


Ingredients:

 Quinoa – 1 cup
 Green Split Moong dal - 1 cup
 Cumin seeds – 1/2 tsp
 Turmeric Powder – 1/4 tsp
 Onions – 1/2 medium
 Ginger – 1 tsp, minced
 Garlic – 1 tsp, minced
 Green Chilies – 3-4
 Green beans – 1/2 cup
 Carrots – 1/2 cup
 Salt to taste
 Water – 5 cups
 Oil/Ghee -2 tsp
 Cilantro to garnish
  
Preparation:
  • Wash and soak Quinoa and Moong dal in water for 10 minutes.Drain water and set aside.
  • In a cooker heat Oil on medium heat,add Cumin Seeds,Onions,green chillies,turmeric powder Cook for a minute.
  • Add minced Ginger & Garlic,cook for a min.
  • Add Vegetables of your choice ( i used green beans and carrot) and cook for 2 mins then add Quinoa and dal and  roast for another 2 mins add salt to taste.
  • Pour in Water and let the water come to boil.
  • Reduce flame to low, cover with lid and cook for 2 vessels or until Quinoa and dal are soft.
  • Garnish with cilantro and serve hot Veg-Quinoa-Dal.

Mint (Pudina) Chutney



Ingredients:

Mint leaves (Pudina) - 2 cups
Dry red chillies - 5-6
Coriander seeds - 1 tsp
Cumin seeds - 1 tsp
Urad dal-1 tsp
Salt to taste
Tamarind - 1 inch piece
oil - 2-3 tbsp


Preparation:
  • Heat 1tbsp oil in a frying pan and add coriander seeds, cumin seeds, red chilies and urad dal and fry 2 mins.let it cool down.
  • Now add 1tbsp oil , mint leaves and tamarind to the same pan and cook it for 2-3 mins,keep stirring once it is cooked switch off the stove and let it cool down.
  • Now add salt and grind all the ingredients finely.
  • Spicy mint (pudina) chutney is ready it tastes great with rice.

Kadai Paneer

 
Kadai Paneer is a  typical North-Indian dish made out of Paneer & Capsicum.

Ingredients:
Paneer (200 gms)
Onions,finely chopped ( 2 medium)
Tomatoes,Chopped ( 2 )
Green pepper ( 2 )
Red chilly powder ( 1tsp)
ginger garlic paste ( 1tsp)
kasoori methi( 1/2 tsp)
Coriander powder ( 1tsp)
Garam masala powder (1/2 tsp)
Cumin seeds ( 1/4 tsp)
cinnamon (1inch stick)
cloves (2)
cardamom (2)
Bay leaf (1)
Oil (2tsp)
Cilantro (10 leaves)


Preparation:
  • Cut paneer and green peppers into cubes.
  • Heat oil in a pan add cinnamon, cardamom, bay leaf, cloves and cumin seeds. Saute for a min.
  • Now add the chopped onion and fry till golden brown add ginger garlic paste and saute for a min.
  • Add green pepper, tomatoes and salt, cover and cook for about 2-3 mins.
  • Now add red chilly powder, coriander powder , kasoori methi and garam masala , mix well and cook for about a min.
  • If necessary add some water , add the paneer cubes and mix it well. Cover and cook on low flame for about  3-4 minutes.
  • Garnish with chopped cilantro. Serve hot with Naan or Roti.

Vadiyala Pulusu ( Moong wadi )


Ingredients:
Moong Wadi ( Pesarupappu vadiyalu )( 20 )
Onion ( 1/2 )
Green chillies ( 2-3)
Cumin Seeds (1/4 tsp)
Mustard Seeds (1/4 tsp)
Ginger garlic paste (1/2 tsp)
Cooking oil ( 2 tsp )
Turmeric ( 1/4 tsp )
Salt to taste
Red chilly powder (1/2 tsp)
Sambhar powder ( 1 tsp)
Curry leaves ( 6-8)
Tamarind ( lemon size )
Water ( 1-2 glass)
Cilantro to garnish.

Preparation:

  • Soak Tamarind in water for 10 mins,extract water from it.
  • Take a pan add oil , Cumin seeds , Mustard seeds , Onion , Green chillies, Turmeric ,Ginger garlic paste,Curry leaves fry for 2 -3 mins.
  • Add Moong wadi (vadiyalu) and fry for 2-3 mins then add Salt to taste, Red chilly powder,Sambhar powder and fry for 5 mins.
  • Then add tamarind water, required amount of water and close the lid.
  • Cook for 10-15 mins or until moong wadi (Vadiyalu) is cooked well , mix it well for every 5 mins.
  • Garnish with cilantro and serve the Vadiyala pulusu with white rice.

Note: Moong wadi is available in indian stores.

Radish Curry

Ingredients:

Radish (4-6)
Onion ( 1/2 )
Green chillies ( 3 )
Salt to taste
Oil ( 1tsp )
Mustard seeds ( 1/2 tsp)
Curry leaves (6-8)

Preparation:

  • Peal the skin of radish and grate them.Cut green chillies into half.
  • Take a pan add oil,when it is hot add mustard seeds,onion,green chillies,curry leaves and fry till they turn to golden brown.
  • Then add grated radish,salt and fry for 4-5 mins.Garnish with cilantro and its ready to serve with Chapathi or Steamed rice.

Plantain Curry


Ingredients:
Raw plantains ( 2 )
Channa dal ( 1/2 cup)
Coconut Powder ( 2 tbsp )
Green Chillies (5-6)
Onion ( 1 )
Turmeric (1/4 tsp)
Cumin seeds (1/2 tsp)
Mustard Seeds (1/2 tsp)
Oil (2-3 tbsp)
Cilantro to garnish
Salt to taste


Preparation:

  • Soak the Channa dal in water for 10-15 mins.
  • Boil the plantains in water for 5 mins then peel and slice into small cubes.
  • Grind the coconut powder, green chillies, a pinch of salt and make a paste.
  • Take a pan add oil , cumin seeds, mustard seeds , Onion and fry for 2 mins.
    Add Turmeric , Channa dal and fry for a min.
  • Then add the plantain cubes and fry for a 2-3 mins ,add the coconut chilly paste
    and mix it well add salt to taste.
  • Cook them covered for about 10-15 minutes.
  • Garnish with cilantro , its ready to serve with rice.

Soya Chunks (Mealmaker) Curry

Ingredients:
Soya Chunks (1 cup)
Tomatoes (2-3)
Onion (1)
Cumin seeds (1/4 tsp)
Mustard seeds (1/4 tsp)
Ginger garlic paste (1/2 tsp)
Turmeric (1/8 tsp)
Coconut powder (1 tsp)
Red chilly powder (1/2 tsp)
Garam masala (1/8 tsp)
Salt to taste
Cilantro to garnish

Preparation:

  • Soak the soya chunks in water for 10 mins,cut them into half.
  • Cut the Onion and tomatoes into small cubes and keep them aside.
  • Take pan add 2tsps oil then add cumin seeds , mustard seeds cook them for a min.
  • Add the onion ,turmeric and ginger garlic paste , Salt to taste and fry for a min then add Soya chunks, let them cook for a 2mins.
  • Then add tomatoes after a min add 1 glass water and close the lid.
  • Cook for 5mins then add red chilly powder , coconut powder , garam masala cook for a 2 mins.
  • Garnish with cilantro and Mealmaker curry is ready to serve.
  • It goes well with Fried rice and chapati.

Cilantro Aloo

Ingredients:
Potatoes ( 4-5 )
Chopped Onion ( 1/2 )
Chopped Cilantro (1/2 bunch)
Cumin seeds ( 1/2 tsp)
Oil (2-3 tbsp)
Salt to taste
Green chilly paste ( 1 tsp )


Preparation:

  • Peal,wash and dice the potatoes.
  • Take a pan add 2tsps oil,cumin seeds,green chilly paste and onion,fry it for 2-3 mins
  • Add turmeric and potatoes and fry for 2-3 mins.
  • Then add Salt to taste and cilantro,mix it well and cook until potato is soft or for 4-5 mins with the lid closed.
  • Mix it for every 2 mins,add 1tsp of oil if necessary.
  • when the potatoes are soft add a pinch of garam masala and mix it well.
  • Cilantro Aloo is ready to serve.

Plantain Fry

Ingredients:
Plantains ( 2 )
Onion ( 1 )
Oil ( 2-3 tbsp )
Salt to taste
Red chilly powder ( 1tsp )
Coriander powder ( 1 tsp )
Cumin seeds ( 1/4 tsp )
Mustard Seeds ( 1/4 tsp )
Turmeric ( 1/4 tsp )
Cilantro to garnish

Preparation:

  • Cut the plantains into half and boil them for 8mins.
  • Peal the skin off and cut them into thin slices.
  • Take a pan add oil , cumin seeds , mustard seeds, onion , turmeric and fry until onion is transperent.
  • Add the plantian slices and fry them for about 5 mins until they are crispy , add 1 or 2 tsps of oil if needed.
  • Then add Red chilly powder, Salt to taste and coriander powder ,mix it well and fry for 2 mins.
  • Garnish with cilantro .Plantain fry is ready to serve, It goes well with white rice.

Bhendakaya Pulusu ( Okra Pulusu )

Ingredients:
Okra ( 10-12 )
Tomatoes ( 2 small )
Onion ( 1/2 )
Green chillies ( 2-3)
Cumin Seeds (1/4 tsp)
Mustard Seeds (1/4 tsp)
Ginger garlic paste (1/2 tsp)
Cooking oil ( 2 tsp )
Turmeric ( 1/4 tsp )
Salt to taste
Red chilly powder (1/2 tsp)
Tamarind ( lemon size )
Water ( 1-2 glass)
Cilantro to garnish.

Preparation:

  • Wash and cut the okra into half,chop the tomatoes and onion and keep them aside.
  • Soak Tamarind in water for 10 mins,extract water from it.
  • Take a pan add oil , Cumin seeds , Mustard seeds , Onion , Green chillies, Turmeric ,Ginger garlic paste.
  • Fry for 2-3 mins then add Tomatoes and fry for 2 mins.
  • Add Okra and fry for 2-3 mins then add Salt to taste, Red chilly powder and fry till Okra is half cooked.
  • Then add tamarind water , required amount of water and close the lid.Cook for 5-8 mins or until the okra is cooked well , mix it well for every 2-3 mins.
  • Garnish with cilantro and serve the okra pulusu with white rice.

Spinach Parata (Palak Parata)


Ingredients:
Spinach (1 1/2 cup)
Cumin seeds (1/4 tsp)
Oil (3 tsp)
Ginger garlic paste (1/2 tsp)
Salt to taste
Red Chilly Powder
Wheat Flour (1 cup)

Preparation:
  • Heat the pan with 2 tsp oil, add cumin seeds, ginger garlic paste, spinach and let it cook for 3 mins.
  • Then add salt and red chilly powder and bring it to curry consistency.
  • In a bowl take wheat flour,mix the curry which me made into the bowl of wheat flour and mix well like we mix our chapathi dough with very little water(if needed).
  • Divide the dough into equal portions.
  • Take the dough and prepare small size chapathi.
  • Fry them on pan with 1 tsp ghee or oil,until brown on both sides.
  • Palak parathas are ready to serve,goes well with yogurt.

Drumstick Sambhar


Ingredients:
Frozen Drumsticks ( 1 Packet )
Tomatoes ( 2 )
Carrot ( 2 )
Onion ( 1/2 )
Toor dal ( 1 cup)
Green chillies ( 2-3)
Cumin Seeds (1/4 tsp)
Mustard Seeds (1/4 tsp)
Ginger garlic paste (1/2 tsp)
Cooking oil ( 2 tsp )
Turmeric ( 1/4 tsp )
Salt to taste
Red chilly powder (1/2 tsp)
Sambhar powder ( 1 tbsp )
Tamarind ( lemon size )
Water ( 1-2 glass)
Cilantro to garnish.

Preparation:

  • Boil the Toor dal in pressure cooker and keep it aside.
  • Soak Tamarind in water for 10 mins,extract juice from it.
  • Take a pan add oil , Cumin seeds , Mustard seeds , Onion , Green chillies, Turmeric ,Ginger garlic paste.
  • Fry for 2-3 mins then add Carrots ,Tomatoes and fry for 2 mins.
  • Add drumsticks and fry for 2-3 mins then add Salt to taste, Red chilly powder and Sambhar powder.
  • Cook for 3 mins,then add tamarind water , water and close the lid.
  • Cook for 5-8 mins or until all the vegetables are cooked well , mix it well for every 2-3 mins.
  • Garnish with cilantro and serve hot.
  • Sambhar goes well with White Rice, Idli , Dosa.

Baingan Bhartha

Baingan Bhartha is a North Indian speciality of roasted brinjals.

Ingredients:

Brinjals ( 8-10 small )
Cooking Oil ( 2 tbsp )
Cumin seeds ( 1 tsp )
Onion ( 1 Big )
Ginger ( 2 inch piece )
Green chillies ( 2 )
Red chilly powder ( 2 tsp )
Salt to taste
Tomatoes ( 4 large ) or ( 1 can )
Cilantro to garnish


Preparation:

  • Wash and roast the brinjals over open flame or in a preheated oven until the skin scorches and starts peeling off and eggplants start to shrink.
  • Let them cool or you can cool them by dipping them in water. Remove skin and mash the pulp completely.
  • Heat oil in a pan add cumin seeds ,cook for half a minute and add chopped onions and saute until onions are golden brown.
  • Add ginger and green chillies and cook for a minute then add red chilly powder and mashed roasted eggplants.
  • Cook for 5-6 minutes over medium heat, stirring continuously add salt to taste.Add tomatoes and cook on medium heat for 5-6 minutes .
  • Garnish with chopped coriander leaves and serve hot.

Palak Paneer

Ingredients:
Spinach (2 bunches)
Paneer (6-8 cubes)
Green Chilly paste (3-4 chillies)
Onion (1 onion)
Tomato (1 seedless tomato)
Salt to taste
Oil
Cilantro

Preparation:
  • Boil water in pan,add spinach and let it cook for 5 mins off the stove before the color of spinach changes,drain the spinach and blend into fine paste.
  • Fry paneer blocks in 1 tbs oil for 3 mins until lightly brown on all sides.place them in bowl of water.before putting into the sauce pan squeeze water out of it properly this way your paneer will be soft.
  • Heat the pan,add oil ,2 cloves of garlic finely chopped,gram masala(1 bay leaf,2 cloves,2 cardamon,1 small Cinnamon stick) and fry them.
  • Add finely chopped onions,green chilly paste into the pan cook until onions are brown add turmeric and let it cook for 2 mins.
  • Then add tomato finely chopped seedless into the pan and let it cook for 5mins.
  • Add paneer blocks into the pan.
  • Add spinach paste into the pan and stir curry without breaking panner blocks.
  • Cook for another 5 mins,when spinach color changes darker your curry is ready.
  • Garnish with cilantro,goes well with Naan and Chapathi.

Pachi pulusu



This is a traditional telangana dish , goes well with rice and dal .

Ingredients:
Tamarind
Finely chopped Onion(1/2 onion)
Oil (2 tbs)
Red chillies(1 chilly)
Green Chillies(2 chillies)
Curry Leaves(4-5 leaves)
Ginger garlic paste(1 tsp)
Salt to taste
Cilantro




Preparation:
  • Soak tamarind in water for 20-25 mins.Squeeze juice from tamarind.
  • Fry green chillies without oil and make them into fine paste.
  • Pour the tamarind juice in separate bowl,add onions,salt,green chilly paste and ginger garlic paste and mix well.
  • If your tamarind juice is sour you can add sugar(1tsp).
  • Heat small pan add oil,mustard seeds,cumin,red chillies .when red chillies are fried,off the stove and add turmeric and curry leaves.We call this process as popu.
  • Pour this popu into the juice we mixed before and mix it well.
  • Garnish with cilantro then ready to serve.

Palak Dal

Ingredients:
Toor Dal (1 cup)
Channa Dal (1/4 cup)
Palak (1 bunch)
Green chillies (3 chillies)
Onions (1 whole)
Salt to taste
Red chillies (2 chillies)
Cilantro

Preparation:

  • Pressure cook Dal, palak,green chillies for 2 whistles.
  • Heat the pan,add oil,mustard seeds,cumin seeds,red chillies,onions and fry them until golden brown add turmeric powder,chopped garlic and salt to taste.
  • Add pressure cooked dal into the pan and stir the dal so that all the ingredients.
  • Let it cook for 5 mins,add cilantro and squeeze half lemon into the dal to get tang if you like.

Zucchini Curry

Ingredients:
Zucchini (2 medium size)
Onion (1 whole)
Green Chillies (3 chillies)
Salt to taste
Coriander powder(1 tbs)
Cilantro

Preparation:
  • Peel the skin on zucchini and finely chop.
  • Heat medium size pan with oil,add cumin seeds and mustard seed onions,green chillies.
  • When onions are fried add turmeric powder and stir the curry.
  • Add ginger garlic paste and let it cook for 2mins and add zucchini stir the curry well to mix all the ingredients and cover with lid for 5 mins
  • Add salt to the curry and stir once again.
  • When zucchini is cooked add coriander powder,cilantro and let it cook for another 2 mins and your curry is ready.

Potato Kurma

Ingredients:
Potatoes (3-4)
Tomatoes (2)
Green peas (1/2 cup)
Onion (1)
Cloves (2-3)
Cinnamon (2 sticks)
Cardamom (Elachi) (2-3)
Cumin seeds (1/4 tsp)
Mustard seeds (1/4 tsp)
Ginger garlic paste (1/2 tsp)
Turmeric (1/8 tsp)
Coconut powder (1 tsp)
Red chilly powder (1/2 tsp)
Garam masala (1/8 tsp)
Salt to taste
Cilantro to garnish

Preparation:

  • Cut the potatoes and tomatoes into small cubes and keep them aside.
  • Take a small pressure cooker , add 2tsps oil then add cumin seeds , mustard seeds, cloves, cardamom, Cinnamon and roast them for a min.
  • Add the onion ,turmeric and ginger garlic paste , Salt to taste and fry for a min then add potatoes,let them cook for a min.
  • Add tomatoes and green peas after a min add 1/2 glass water and close the cooker lid with the whistle after one whistle turn off the stove.
  • Let it cool down and then open the lid switch on the stove add red chilly powder , coconut powder , garam masala cook for a 2 mins.
  • Garnish with cilantro and your potato kurma is ready to serve.
  • It goes well with Fried rice, lemon rice and chapati.

Green Beans Fry

Ingredients:
Green beans
Channa Dal
Onions
Green Chillies
Oil
Salt to taste
Ginger garlic paste
Cilantro

Preparation:
  • Finely chop green beans,onions,green chillies and cilantro.
  • Heat medium size pan,pour 3tbs oil,add cumin seeds,mustard seeds when mustard seeds pop up,add green chilli's,onions and Channa Dal.(for one cup of chopped green beans add 1/4 cup of Channa)If you like to add more or less its up to you.
  • Fry all together for 5 mins and add turmeric powder and ginger garlic paste and fry them for 2 more mins.
  • Add chopped green beans,stir the curry so that all the ingredients are mixed well.
  • Let it cook for 5 mins,add salt and stir the curry once again and let it cook for another 5 more mins or until beans are cooked.
  • Add cilantro to the curry and your green bean curry is ready to eat.

Broccoli Curry


Ingredients:
Broccoli
Chopped Onion
2 tsp Chana dal
2-3 Green chillies
Salt to taste
1/4 tsp Cumin Seeds
1/4 tsp Mustard Seeds
1/4 tsp Turmeric
2 tsp Oil
1/2 tsp ginger garlic paste


Preparation:
  • Chop the broccoli and onion and keep aside
  • Take a pan add oil,cumin seeds, mustard seeds,green chillies and onion.
  • Fry it till the onions are golden brown,add turmeric,chana dal ,salt and ginger garlic paste.
  • Cook it for 2-3 mins then add broccoli and cook until the broccoli is soft.
  • Garnish with cilantro.
