Mint (Pudina) Chutney



Ingredients:

Mint leaves (Pudina) - 2 cups
Dry red chillies - 5-6
Coriander seeds - 1 tsp
Cumin seeds - 1 tsp
Urad dal-1 tsp
Salt to taste
Tamarind - 1 inch piece
oil - 2-3 tbsp


Preparation:
  • Heat 1tbsp oil in a frying pan and add coriander seeds, cumin seeds, red chilies and urad dal and fry 2 mins.let it cool down.
  • Now add 1tbsp oil , mint leaves and tamarind to the same pan and cook it for 2-3 mins,keep stirring once it is cooked switch off the stove and let it cool down.
  • Now add salt and grind all the ingredients finely.
  • Spicy mint (pudina) chutney is ready it tastes great with rice.

Peanut & Cilantro chutney

Ingredients:

Peanuts - 1/2 cup
Green chillies - 3 or 4
Cumin seeds - 1 tsp
Cilantro - 1/2 bunch
Garlic - 2 cloves
Urad dal - 1/2 tsp
Red chillies - 2
Mustard seeds - 1/4 tsp
Oil - 3 tsp
Salt to taste


Preparation:
  • Take a pan ,dry roast peanuts and keep them aside.Remove the skin if you can.
  • Then add them in a blending jar with cilantro and salt.
  • In then same pan add 2tsp oil, cumin seeds,garlic cloves and green chillies.
  • Fry them for 2-3 mins and add in the blending jar.
  • Grind them well add very little amount of water if necessary.
  • Take a small pan add 1 tsp oil ,mustard seeds,Red chillies and urad dal fry for 2mins.
  • Then add the tempering to the chutney and the peanut & cilantro chutney is ready to serve with Idli,Dosa and Bondas.

Ridge gourd Skin Chutney (Birakaya pottu Pacchadi)


Ingredients:
Birakaya Pottu (Ridge gourd Skin) ( 2 Big )
Urad dal ( 2 tsp )
Green chilies ( 5-6 )
Mustard Seeds(1/2 tsp)
Cumin seeds (1/2 tsp)
Peanuts (1/2 cup)
Ginger ( 1 inch stick)
Garlic ( 2-3 Cloves )
Coriander seeds ( 1 tsp)
Tamarind ( Lemon size )
Salt to taste
Turmeric ( 1/4 tsp)
Red Chillies ( 2 )
Oil ( 2 tbsp)
Cilantro to garnish

Preparation:

  • Take a pan add 2 tsps Oil when the oil is hot add 1 tsp urad dal,Coriander seeds,Green chillies,peanuts ,ginger stick,Chopped garlic and Tamarind.
  • Fry for 2 mins and keep them a side.
  • In the same pan add 2 tsp Oil and Ridge gourd skin fry for 5 mins.Add salt and grind them all together.
  • Take a pan add 1 tsp oil , cumin seeds , Mustard seeds,1 tsp urad dal ,Turmeric, Red chillies and cilantro.
  • Add the tempering to the chutney,mix it well and serve with white rice.

Tomato Chutney

Ingredients:
Tomatoes ( 3 Big )
Peanuts ( 1/2 cup )
Red chillies ( 2-3 )
Salt to taste
Cumin seeds (1/2 tsp)
Garlic ( 2 pieces )
Turmeric (1/4 tsp)
Oil ( 3tsp )
Mint or cilantro (1 cup)

Procedure:



  • Cut 3 Tomatoes in to small pieces.
  • Take a pan add 1 tsp oil ,peanuts,cumin seeds, red chillies for 2 mins and keep it aside.
  • In the same pan add 2 tsps oil,Tomatoes, turmeric , Salt to taste and crushed garlic.
  • Fry them for 5 mins,till tomatoes are cooked.
  • Add all the contents , mint or cilantro in the blending jar and grind them well.
  • Garnish with cilantro or mint, goes well with Rice & Dosa.

Red bell pepper chutney

Ingredients:
Red bell pepper ( 3 )
Peanuts ( 1/2 cup )
Green chillies ( 2-3 )
Salt to taste
Cumin seeds (1/2 tsp)
Garlic ( 2 pieces )
Turmeric (1/4 tsp)
Oil ( 2tsp )

Procedure:


  • Cut 3 red bell peppers into small pieces.
  • Take a pan dry roast peanuts,cumin seeds, Green chillies for 2 mins and keep it aside.
  • In the same pan add 2 tsps oil,Red bell peppers, turmeric , Salt to taste and crushed garlic.
  • Fry them for 3-4 mins,till the red peppers are soft.
  • Add all the contents in the blending jar and grind them well
  • Garnish with cilantro.Red bell pepper chutney is ready to serve.

Sorakaya Chutney (Bottle gourd)

Ingredients:
Sorakaya (1 Big)
Green Chillies ( 3-4 )
Peanuts ( 1/2 cup)
Oil ( 2 tsp ) 
Tamarind ( 1 inch)
Cumin Seeds ( 1/4 tsp)
Cilantro to garnish
Garlic (2 cloves)

Preparation:

  • Peel out the skin on sorakaya and chop them into 1 inch cubes.
  • Dry roast the peanuts and blend them with salt and green chillies.
  • Heat the pan,add oil,cumin seeds,2 cloves of garlic,tamarind and chopped sorakaya.
  • Let it cook for 5-10 mins on medium heat with a lid on pan,until sorakaya is cooked.
  • Add cilantro and off the stove,let it cool down for 5 mins.
  • Blend the sorakaya with peanut paste into coarse paste or fine as you like and its ready.

Cabbage Chutney


Ingredients:
Chopped Cabbage (small)
Urad dal ( 2 tsp )
Red chilies ( 3)
Mustard Seeds(1/2 tsp)
Cumin seeds (1/2 tsp)
Peanuts (1/2 cup)
Garlic ( 2 Cloves )
Salt to taste
Turmeric ( 1/4 tsp)
Oil ( 2 tbsp)
Cilantro to garnish

Preparation:

  • Take a pan dry roast peanuts,cumin seeds, Red Chillies for 2 mins and keep it aside.
  • In the same pan add 2 tsps oil,cabbage, turmeric , Salt to taste and crushed garlic.
  • Fry them for 3-4 mins,till the cabbage is soft or brown in colour.
  • Add all the contents in the blending jar and grind them well add very little amount of water if necessary.
  • Take a small pan add oil , mustard seeds and urad dal and fry for 2-3 mins.
  • Add the tadka to the cabbage chutney, mix it well garnish with cilantro and serve with Plain rice or Dosa.
