Creamy Avocado Pasta


Ingredients:
Pasta (whole grain spaghetti) -  12 oz
Ripe Avocados --2 (pitted and scooped)
Fresh basil - 1cup
lemon - 1
Olive oil - 1tbsp
Garlic - 2 cloves
Black pepper - 1/4 tsp
Salt to taste
Milk - 1/2 cup
Grated Parmesan (optional)

Preparation:


  • In a medium-sized pot of  water add 2-3 drops of oil and let it boil. Add pasta, reduce heat slightly and cook for 8-10 minutes.
  • In a food processor, combine scooped avocados, lemon juice, garlic, olive oil, basil ,milk ,black pepper and salt. Blend until smooth and  creamy. 
  • Transfer cooked pasta to a bowl and toss with avocado mixture , Serve with grated Parmesan, if desired.
  • Enjoy yummy and creamy avocado pasta  as soon as it’s done.

Avocado-Mint Dip/Spread




Avocado and mint leaves combine with yogurt for a refreshing appetizer dip/spread.

Ingredients:

Avocado, peeled, pitted, and cut into cubes - 1
Plain  yogurt  - 3 tbsp
Fresh lime juice - 1 tsp 
Fresh mint leaves - 1/4 cup 
Salt to taste

Preparation:

  • Combine all the ingredients in a blender or food processor, and process until creamy.
Note:Spread on whole grain bread, use as a dip for veggies or chips.

Avocado Parata



Ingredients:

Ripe Avocados – 2 
Wheat Flour– 2 cups
Lime Juice – 2 tbsp
Garlic – 2 tbsp, minced
Green Chillies – 3, minced
Cilantro – 1/2 cup, chopped
Roasted Cumin seeds – 1/2 tsp
Salt  to taste
Oil /Ghee – 2 tsp

Preparation:
  • Peel the Avocados and mash them to a smooth paste .
  • Mix in Lime Juice, Salt, Garlic, Green Chillies, Cilantro, Roasted Cumin seeds and 1tsp Oil/ghee. 
  • Mix the paste properly and add flour in little at a time and keep mixing.
  • Once the dough comes together, knead for an additional minute.
  • Drizzle few drops of Oil over the dough to coat. Cover and allow the dough to rest for 15-20 minutes.
  • Once you are ready to make the paratas, give the dough one more quick knead.
  • Heat up a tawa on medium heat and start dividing the dough and make balls.
  • Take a dough ball and flatten between the palms of your hand.
  • Dip in additional dry flour and start rolling with a rolling pin using Flour to dust.
  • Once the Parata is rolled out and the tawa is hot, place it on the tawa.
  • Add 1tsp Ghee/Oil  and roast the parata for a min on either side.
  • Take off the parata from Tawa and place in a hot case till ready to serve.
  • Serve hot avocado parata with yogurt and pickle or have it as a chapathi.

Apple and Avocado Smoothie


Apple and Avocado Smoothie works well as a quick breakfast or a post-dinner treat.

Ingredients:

Apple - 1 
Avocado - 1 
Mint leaves - 1/4 cup 
Lime juice - 2 tsp
Water - 2 cups
Ice Cubes - 1 cup 

Preparation:

Add all the ingredients in a blender and process until smooth.
Pour it over ice cubes and garnish with mint leaves and enjoy your Apple and Avocado Smoothie.

Avocado Shake




Ingredients


Ripe Avocado - 1 
Ice cubes - 4-5
Low fat Milk - 1/2 cup
Fat free sweetened condensed milk  - 2-3 tbsp

Preparation

Using a spoon, scoop out avocado flesh into the blender and add Milk,condensed milk & ice cubes. Blend for 20 seconds,Pour into a glass and drink right away.

GUACAMOLE

Ingredients:
Ripe avocados ( 2 )
Red onion, minced (1/2 cup)
Jalapeno,minced ( 1 )
Cilantro leaves, finely chopped ( 5-6 )
Fresh lime juice ( 1tbsp)
Garlic, minced ( 1 clove)
Tomato,chopped ( 1 )
Salt to taste


Preparation:
  • Cut avocados in half,remove seed. Scoop out avocado from the peel, put in a mixing bowl.Using a fork mash it properly.
  • Then add Onion ,Jalapeno , cilantro, garlic and salt mix it well.
  • Finally add tomato ,lemon juice and mix it well.
  • Garnish with cilantro and refrigerate until you serve.
  • Serve guacamole with tortilla chips.
