Egg baked Avocado



Avocados not only taste delicious but are packed with full of healthy fats and dietary fibers. Consuming it in a breakfast dish will keep up your energy levels throughout the day. This recipe makes use of both avocados and eggs.


Ingredients:

Avocado - 2
Eggs - 4
Pepper - 1/4 tsp
Chilly flakes - 1/2 tsp
Salt to taste
Shredded Mozzarella - 1/4 cup

Preparation:
  • Slice the avocados into half(Its better if the avocados are medium firm and not too soft like the ones we use for guacamole).
  • Remove the pit and scoop out little more flesh in the middle so that you make enough space to fit in the cracked eggs.
  • Now poke holes in the avocado using a fork and sprinkle salt and pepper.
  • Crack the eggs and remove the yolk if desired. Pour this into the pit and sprinkle some salt, pepper, chilly flakes and top it off with some shredded mozzarella cheese.
  • Place these avocados on a baking tray.
  • Preheat the oven to 425 degrees and place the baking tray in it and bake for around 15min or till your eggs are done.
Additional tips: You can also add any vegetable pieces like peppers, tomatoes, spinach etc to the toppings if you like.

Sugar Cookies


Its Christmas season so i prepared sugar cookies,
which are sweet and tender.Sugar cookies are popular during the holidays ,kids love them specially when they are in different shapes and colorfully decorated. Sugar cookies are quick and easy to prepare and a good holiday gift idea .

 



Ingredients:
All purpose flour(3 cups)

Baking powder ( 1 tsp)

Salt (1/4 tsp)

Sugar ( 1 cup)

Unsalted Butter( 1 stick)

Large eggs ( 2 )
Vanilla extract ( 2 tsp)




Preparation:
•In a bowl add all purpose flour,salt,baking powder and mix it well.
•In a large mixing bowl add butter,sugar and mix it well then add eggs,vanilla extract and blend it with electric mixer for a min then add all purpose flour and mix it well like a chapathi dough.
•Knead the dough properly and make it in to four equal parts and wrap each piece in zip lock bags and refrigerate for 30 mins.
•Then preheat the oven at 350 degrees for 5 mins.
•Take the dough out from the refrigerator and roll the dough like chapathi using a rolling pin and little flour.
•Using a cookie cutter cut the dough and place them on the cookie tray with 1 inch apart,grease the cookie tray with little butter or oil before placing the cookies.
•Keep in the oven for 10-12 mins or until they are lightly brown.
•Let them cool down for 10 mins then you can decorate your cookies as you wish.

Rainbow Cake Video

                            

Rainbow Cake

This cake may look like an ordinary white cake on the outside, when you cut the first slice you soon realize that it’s in fact the wonderful cake you’ve ever seen. Made with 5 or 6 colors this cake is as beautiful as a rainbow.
Here is the step by step procedure to prepare rainbow cake.



Ingredients :
White Cake mix (1 box)
Icing colors (5 or 6)
Water (1 1/3 cups)
Egg Whites (3)
Vegetable Oil (2 tbsp)




Take a mixing bowl add cake mix, egg whites ,water and vegetable oil.

          
 Using a cake mixer blend all the ingredients properly for about 2 mins .



Now divide the batter into 5 or 6 equal parts.

Add one color in each bowl.if you don't have all the colors you can mix 2 colors to make a different color.Here are few combinations. Red ,Blue,Yellow are primary colors. Orange = (Red + yellow).Purple = (Red + Blue).Green = (Blue + Yellow).



Mix the colors properly , for darker colors add more icing colors.


Grease the pan with oil or butter and pour 2tbs of darker color batter in the middle of the pan.




Repeat the same process with all different colors to make a rainbow.




Now the rainbow cake pans are ready to go into the oven.Preheat the oven for 5 mins at 400 degrees.





Bake the cake at 350 degrees for 30 to 35 mins or inserted toothpick comes out clean.


Cakes are out of the oven , let them cool for 15-20 mins.
  

 
Now comes the fun part, you get to decorate !!
what we have done with this cake is the flower design using FONDANT. Though it was my first attempt of working with fondant, i soon realized this it is very easy and as simple as playing with play dough.





This colorful layer cake is ideal for a child's birthday party.Making a rainbow cake is fun,easy and will give your loved ones a big surprise when they cut the cake.

Cake ( Decorated with Frosting)


 I was inspired by food network "Cake Challenge" program and the ease with they make beautiful decorated cakes. As you all know the best to master anything is to practice it many times. So here is my first attempt of making roses and decorating the cake. Hope you all like it and expect some more cakes pretty soon.

Vanilla Cupcakes



Valentine's day is a very special day for all the people because this day brings out the feeling of love in everyone. We often take things for granted and forget expressing our love. This day will help everyone to remember the feelings for our true love.
So i thought of preparing something special for my husband and thought of making beautiful delicious cupcakes.This was my first attempt of making cupcakes and was very happy to see that they turned out real good.

 
Ingredients:
Unsalted Butter,softened (1 Stick)
Sugar (1/2 cup)
Eggs ( 2 )
Baking powder ( 1 tsp)
Salt ( A pinch )
All purpose flour ( 1/2 cup)
Milk (2 tbsp)
Vanilla Extract ( 1 tsp)

Preparation:

  • Preheat Oven to 350 degrees F for 5 mins.
  • In a large mixing bowl add butter,sugar and mix it well then add eggs,vanilla extract,milk and blend it with electric mixer for a min then add all purpose flour,salt,baking powder and blend it well for 2 mins.
  • Take a Muffin/cupcake pan and line with paper liners,Now fill liners 1/2 to 2/3 full of batter.Do not overfill.
  • Bake 18 to 20 minutes or until toothpick inserted in center comes out clean.
  • Remove from the pan and let it cool for about 10-15 mins then frost and decorate your vanilla cupcakes as desired.
  • Note:If you are using self-rising flour skip baking power an salt.
  • These Cupcakes are decorated with Mini marshmallows and coloured sugar crystals,as these cupcakes are in the shape of sunflower it is named as sunflower cupcakes.

Chocolate Cake

It is customary that everyone celebrates the mark of a historic event. Here we are doing the same thing, while being proud, to welcome the 1st anniversary of our blog. Thanks for all the readers making time from their busy schedule to support our blog.

Ingredients:
All-purpose flour (1-3/4 cups)
HERSHEY'S Cocoa (3/4 cup)
Sugar (2 cups)
Baking powder (1-1/2 tsp)
baking soda (1-1/2 tsp)
Salt (1 tsp)
Eggs ( 2 )
Milk (1 cup)
Vegetable oil  (1/2 cup)
vanilla extract (1 tsp)
Chocolate frosting (1 cup)


Preparation:
  • Heat oven to 350°F. Grease a 9-inch round baking pan.
  • In a large bowl stir sugar, flour, cocoa, baking powder, baking soda and salt,mix it well. Now add eggs, milk, oil and vanilla; beat on medium speed of mixer for 2 minutes. Pour batter into the pan.
  • Bake for 30 to 35 minutes or until wooden pick inserted in center comes out clean. let it Cool for 15 minutes; Remove from pan , frost with Chocolate frosting and decorate the cake as you wish.

Vegetable-Pinwheels

 
Ingredients:
Pepperidge farm puff pastry sheets ( 1 Box )
Chopped Onion ( 1/2 )
Chopped carrot ( 2 )
Chopped Green beans (5-6)
Chopped potato ( 2 )
Chopped cabbage ( 1/4 )
Green Peas (1/2 cup)
Amchur powder ( 1 tsp)
Salt to taste
Red Chilly powder (1 tsp)
Cooking Oil (1 tsp)


Preparation:
  • Take a pan add oil ,Chopped Onion,Chopped carrot,Chopped Cabbage,Chopped Green beans,Chopped potato,Green Peas.
  • Cook for 2-3 mins and add Amchur powder,Salt to taste and Red Chilly powder.
  • Cook it for 8-10 mins and Keep the curry aside.
  • Allow to thaw the frozen Pepperidgefarm puff pastry sheets for about 20 mins.
  • On a board Sprinkle all purpose flour Open the sheet and using rolling pin roll the sheet little bit.
  • Place the curry on the Sheet and spread it evenly.Roll the sheet tightly and seal it with water or egg white.
  • Using a bread knife cut 1/2 inch rolls.Repeat the same process with the other sheet.
  • Preheat the oven at 400 degrees for 5 mins and place the Veg Pinwheels on the Aluminium foil with enough space in between the Veg pinwheels.
  • Bake the Veg pinwheels for 15-20 mins in the oven at 350 degrees and take out from the oven,Its ready to serve.

Chicken Puffs

 
Ingredients:
Pepperidge farm puff pastry Sheets ( 1 box)
Boneless Chicken ( 1/2 lb)
Salt to taste
Red Chilly powder (1tsp)
Onion ( 1/2 )
ginger garlic paste ( 1/2 tsp)
Oil ( 2 tbsp)
Turmeric powder ( 1/4 tsp)
Garam Masala (1/2 tsp)
Chopped coriander leaves ( 1 tbsp)
Chopped mint leaves (1 tbsp)
lime juice ( 1tsp)

Pepperidge Farm Puff Pastry Sheets : You get 2 sheets in one box,you can make 9 puffs in one sheet.


Preparation :

Chicken Fry:

  • Cut the boneless chicken into bite size cubes.
  • Heat a pan add oil ,onion and turmeric powder let it cook for a min then add ginger garlic paste.
  • Cook it for a min then add chicken and cook for 5-6 mins then add salt to taste , red chilly powder and chopped mint.
  • Close the lid and cook for abt 5 mins then add garam masala , chopped coriander leaves and lime juice.
  • Open the lid and cook for abt 5 mins until the chicken is cooked well.
Chicken Puffs:
  • Allow to thaw the frozen Pepperidge farm puff pastry sheets for about 20 mins.
  • Open the sheet and cut into 9 equal parts and place the chicken fry in the sheets.Join all the ends of the sheet in the center.
  • Repeat the process and prepare all the puffs.
  • Pre heat the oven at 400 degrees for 5 mins and place the Chicken puffs on the Aluminium foil with enough space in between the puffs.
  • Bake the puffs for 20 mins in the oven at 350 degrees ,when they are golden brown puffs are ready to serve.

Nan Khatai ( Biscuits )

Ingredients:

All purpose flour (1/3 cup)
Gram flour (besan) (1/2 cup)
Sooji (1/3 cup)
Butter( 1/2 cup)
Cardamon powder (1/2 cup)
Sugar (2/3 cup)
Baking soda (pinch)

Procedure:

  • In a bowl,mix the butter and sugar at room temperature until soft and fluffy.
  • In another bowl,mix all dry ingredients such as flour,besan,baking soda,sooji
    and cardamon powder mix them well.
  • Now slowly transfer the dry ingredients into the butter and sugar mixture slowly
    so that all the mixture is mixed thoroughly with the butter and form and dough kind of texture.
  • Now take small amounts of dough and make into small balls and flatten them in
    middle to form a biscuit shape.
  • You can garnish with any dry fruits in the middle of the biscuit.
  • Now preheat the oven to 350 degrees and place the tray of biscuits into the oven
    for 10-12 Min's or until lightly brown.
  • Cool them and munch with tea or coffee.

Naan Pizza

Its Summer time ...So we had a party in the park with our cousins, we tried Naan Pizza on the grill.This is a great Summer time grilling recipe.Quick and easy ,kids love it.

Ingredients:
Naan (Indian Bread) (2)
Ragu Sauce ( 2-3 tbsp )
Sliced Onion ( 1 )
Sliced Green Peppers ( 1 )
Grilled Chicken ( 1/2 cup )
Shredded cheese ( 1 cup )

Grill:

  • Switch On the Grill,the coal should be red and hot.
  • Place the naan on Aluminum Foil.
  • Spread the ragu sauce all over the naan.
  • Scatter the Onions,Green peppers,Grilled Chicken and cheese over the top.
  • Place on the Grill and cook for 5 mins until the cheese is bubbling.

Oven:

  • Preheat your oven to 400F.
  • Place the naan on a baking tray.Spread the ragu sauce all over the naan.
  • Scatter the Onions,Green peppers,Grilled Chicken and cheese over the top.
  • Place in the oven and bake for 7-8 mins until the cheese is bubbling.

Note: You can use other topping like Olives , Tomatoes , Jalapenos

Strawberry Napoleon


Ingredients:
Puff pastry Sheets ( 2 )
Whip Cream ( 1 cup )
Fresh Strawberries ( 8-10 )

Preparation:

  • Thaw the Puff pastry sheets for about 20 mins , Then unfold the sheets and cut into 3 stripes along the fold marks and make 3 pieces in each.
  • Place on baking sheets and bake them in the oven for 15 mins or until golden at 400 degree F.
  • Wash and Slice the strawberries and keep them aside.
  • When the baked sheets are cooled , apply a layer of whip cream,strawberry slices,another baked pastry sheet , repeat the process
  • layer of whip cream ,strawberry slices and another baked pastry sheet.
  • On the top layer you can decorate with strawberry or sugar powder or melted chocolate.
  • Refrigerate for 30 mins and serve it.

Fruit Tart (100th Post)


This is our 100th post , as 100 is a special number we were planning to do something special.Then i thought of preparing Fruit tart, my favorite dessert. Its quick and easy to prepare.

Ingredients :
1 Prepared graham pie crust, found on baking section in any grocery store
Vanilla or Lemon flavor instant pudding mix ( 1 Box)
Orange or lemon, zest ed ( 1 )
Oranges ( 1 can )
Peaches ( 1 can )
Blackberries ( 1 Pint )
Milk(1 1/2 cup)


Preparation:

  • Bake the crust for 5 mins in the oven at 350 degrees and take it out and let it cool.
  • Make the pudding as per the directions on the box , add the lemon or orange zest and let it stand for 5 mins.
  • Fill the pudding in the graham pie crust and decorate with your favorite fruits and whip cream (optional) , i have used oranges,peaches ,black berries.
  • Chill it and serve the fruit tart.

Pineapple Cake

Ingredients:
All-Purpose-Flour (2 cups)
Sugar (1 1/4 cup)
Butter (1/2 cup)
Pineapple essence (1 tsp)
Baking powder (3 tbs)
Eggs (4 egg whites)
Milk (1/2 cup)
Pineapple chucks (1/2 cup)

Preparation:
  • Preheat oven to 350F.Grease 9 inch round cake pan with butter.
  • In large bowl,mix butter and sugar with electric mixer until light and fluffy then add pineapple essence and milk.
  • Add egg whites and mix them until all wet ingredients are mixed well together.
  • Add flour and baking powder into the bowl of wet ingredients and mix until flour is moist.
  • Add finely chopped pineapple into the cake batter and mix well.
  • Pour batter evenly into greased cake pan.
  • Bake for 30-35 mins.You can check the cake by inserting toothpick in middle comes out clean.
  • Let the cake cool down completely before enjoying the cake.

Curry Puffs


Ingredients:
Pepperidge farm puff pastry sheets
Chopped Onion
Chopped carrot
Chopped Green beans
Chopped potato
Green Peas
Amchur powder
Salt to taste
Red Chilly powder

Pepperidge Farm Puff Pastry Sheets : You get 2 sheets in one box,you can make 9 puffs in one sheet.


Preparation:

  • Take a pan add oil ,Chopped Onion,Chopped carrot,Chopped beans,Chopped potato
    Green beans,Green Peas,Amchur powder,Salt to taste and Red Chilly powder.

White Coconut Cake


Ingredients:
All-purpose flour (2 cups)
Sugar (1 1/2 cup)
Baking powder (3 tsp)
Salt (1/2 tsp)
Butter (1/2 cup)
Vanilla extracts or coconut extracts(1 tsp)
Egg white (5 eggs)
Milk (1/2 cup)
Coconut flakes(1/2 cup)

Preparation:
  • Heat oven to 350 F .Grease (8 or 9 inch) round cake pan with butter,lightly flour.
  • In large bowl,add flour,sugar,baking powder,salt ,milk,butter and vanilla essence coconut
  • Mix with electric mixer on low speed until moistened scraping the bowl occasionally.Beat on medium speed for 2 mins,scraping bowl occasionally.
  • Add egg whites,beat 2 mins longer.
  • Pour batter evenly into pan.
  • Bake for 30-35 mins(keep checking the cake after 30mins) until toothpick comes out clean.
  • Decorate the cake with frosting,Almonds and fruits.

Blueberry-Raisins Muffin

Ingredients:
2 cups all purpose flour
1/4 cup sugar
1 tbsp Baking powder
1/2 tsp salt
1 cup milk
1 egg beaten
1/2 stick butter
1 cup blueberries
1/2 cup Raisins

Preparation:

  • Preheat Oven to 400 degrees, grease a 12 cup muffin pan.Sift flour, sugar,baking powder and salt into a medium bowl , make a well in center.
  • Mix milk,egg,butter,blueberries and raisins into a small bowl .
  • Pour mixture into well.Mix batter just until moistened; do not over mix.
  • Spoon batter into prepared muffin cups.
  • Bake until a toothpick inserted in center comes out clean or until muffins are golden brown,abt 15 mins.

Carrot-Nut Muffins


Ingredients:
2 cups all purpose flour
3/4 cup sugar
1 tbsp Baking powder
1/2 tsp salt
1 cup milk
1 egg beaten
3/4 stick butter
1 cup grated carrot
1/2 cup chopped walnuts

Preparation:
  • Preheat Oven to 400 degrees, grease a 12 cup muffin pan.Sift flour, sugar,baking powder and salt into a medium bowl , make a well in center.
  • Mix milk,egg,butter,carrot and walnuts into a small bowl .

Cinnamon Tea Cakes

Ingredients:
Sugar (1/2 cup)
Butter (1 cup)
Vanilla (1 tsp)
All-purpose-flour (2 cups)
Walnuts (1 cup finely chopped)
Ground cinnamon (1/2 tsp)
salt (1/8 tsp)

Coating:

Granulated Sugar(1/4 cup)

Ground cinnamon(1 tsp)

Preparation:

Heat oven 325F,In large bowl,beat sugar, butter and vanilla with electric mixer on medium speed until light and fluffy.On low speed,beat remaining ingredients until well combined.Shape dough into 1-inch balls,place 1 inch apart on ungreased cookie tray.Bake 14 to 16 mins or until set but not brown.Mean while in a small bowl mix coating ingredients,sugar and cinnamon powder.Roll warm cakes in coating.Enjoy these tea time cakes after it gets cool.
