Egg Biryani



Ingredients:
Eggs --6
Basmati rice --2 cups
Oil --2 tablespoons
Bay leaves - 2
Cinnamon --1 inch stick
Green cardamoms --4
Cloves -- 4
Onion --1 medium
Ginger garlic paste --2 tsp
Curd (Yogurt) -- 1cup
Fresh coriander leaves,chopped --1 cup
Fresh mint leaves ,chopped--1 cup
Red chilly powder --1 tsp
Coriander powder--1 tsp
Turmeric powder--1/4 tsp
Cumin seeds -- 1/2 tsp
Green chilly -- 4 
Sliced ginger--1/2 inch stick
Fried onion -- 1 cup
Yellow color / Saffron (soak in 2tbsp water) -- Pinch
Salt to taste

Preparation:

  • Soak basmathi rice in water for 30 mins and drain the water.Eggs should be hard boiled,peeled and halved.
  • To prepare fried onion slice onion and deep fry in oil till they are golden brown.
  • In a deep pan add water and when the water comes to boil add the soaked rice ,cumin seeds ,cover and cook  on high heat for five minutes or till the rice is 80% cooked.Immediately drain the water and keep the rice aside.
  • Heat  oil in a deep pan. Add  bay leaves, cinnamon, cardamoms and cloves and saute for one minute. Add onions and saute till soft. 
  • Add  ginger garlic paste and saute till fragrant.Add  chilly powder, turmeric powder ,coriander powder,salt to taste and saute for few seconds. 
  • Add curd and saute for two minutes. Add  coriander leaves and mint leaves,sliced ginger,green chilly and continue to saute for two minutes longer.  
  • When the masala is cooked well add halved eggs and cook for 5 minutes,mix gently.
  • Now spread rice on  egg masala add yellow color or saffron,spread fried onion , mint leaves and cilantro.
  • Cover the pan with Aluminium foil and close the lid . 
  • Place a tawa on the stove and then place the biryani pan on the tawa,lower heat and continue to cook for ten minutes, or till the rice is done and all the moisture has been absorbed. 
  • Transfer the biryani to a platter and serve hot egg biryani with mirchi ka salan ,raitha.

Egg Pulusu

Ingredients:
Eggs ( 6 )
Tamarind (Big lemon sized)
Green chillies ( 3 )
Red chilly powder ( 1 tsp )
Onion ( 1 Big )
Curry leaves (6-8)
Fenugreek seeds(Methi)(1/2 tsp)
Cumin (Jeera) (1 tsp)
Mustard seeds (1/2 tsp)
Ginger garlic paste (1/2 tsp)
Coconut powder ( 2 tsp)
Turmeric (1/2 tsp)
Salt to taste
Cooking oil ( 3 tsp)

Cilantro to garnish

Preparation:

  • Boil the eggs in water with a pinch of salt.
  • Peal the shell and make slits on the egg using a knife.
  • Soak the tamarind in water for about 15 minutes and extract juice from it.
  • Dry roast 1/2 tsp Methi seeds and 1/2 tsp cumin on low flame and grind them.
  • Take a pan add 1tsp oil, 1/2 tsp cumin seeds, green chillies and onion fry for 2-3 mins. Let it cool down and make paste of it.
  • Heat 2 tsp oil in a pan, add mustard seeds When they splutter add curry leaves.
    Add the onion paste and fry until it is reddish brown in colour.
  • Now add ginger garlic paste,turmeric,red chilly powder,jeera methi powder,salt to taste and fry for about 3 mins.
  • Add coconut powder and fry for 2-3 mins.Add eggs and fry for 2 mins then add Tamarind water and let it boil.
  • Cook for 8-10 mins ,Garnish with cilantro. Serve egg pulusu with hot steamed rice.

Egg Masala


Ingredients:
Eggs (4-6)
Onion ( 1 )
Tomatoes ( 2 )
Ginger garlic paste ( 1/2 tsp)
Whole garam masala ( 2-3 cloves ,1 inch cinnamon stick , 2-3 cardamom)
Cumin seeds ( 1/4 tsp)
Mustard seeds (1/4 tsp)
Turmeric ( 1/4 tsp)
Red chilly powder ( 1 tsp)
Coriander powder ( 1tsp)
Salt to taste
Oil ( 2 tsp)
Cilantro to garnish


Preparation:

  • Boil the eggs , peal the shell and using a knife make few marks on the egg and keep them aside.
  • Take a pan add oil ,cumin seeds , mustard seeds , onion , turmeric , whole garam masala ,ginger garlic paste and fry for 2 mins.
  • Then add tomatoes fry for a min then add salt to taste , red chilly powder , Coriander powder and fry for 2 mins.
  • Add eggs and cook for 4-5 mins , garnish with cilantro.

Cauliflower Egg Curry

Ingredients:
Cauliflower(1 whole)
Oil (3tbs)
Onion (1 whole)
Eggs (3 eggs)
green chilly (3 chillies)
Red chilly powder (1/2 tsp)
Salt to taste
Coriander powder(1tbs)
Cilantro

Preparation:
  • Cut the cauliflower into medium size pieces and soak them in salt water fro 5 mins.
  • Heat large pan, with 2tbs oil add cumin seeds,mustard seeds ,green chillies,onions and fry them until brown add turmeric powder and stir for 2mins .
  • Add chopped cauliflower and stir the curry thoroughly and cover the pan with lid for 5 mins until cauliflower is cooked.
  • Add salt and red chilly powder and stir once again.
  • Beat 3 eggs into the curry and mix them on high heat until well cooked,simmer the stove to medium heat and cook until eggs are well cooked.
  • Add coriander powder and stir the curry for 5 mins.
  • Garnish with cilantro and your curry is ready to serve.
  • Goes well with chapathi and rice.

Tomato Egg Curry

Ingredients:
Tomatoes 4-5
Eggs 3-4
Chopped onions
Coconut powder (1tsp)
Garam masala powder (1/4 tsp)
Turmeric (pinch)
Cumin seeds (1/4 tsp)
Mustard seeds (1/4 tsp)
Milk (1/2 cup)
Ginger garlic paste (1/2 tsp)
Red chilly powder (1/2 tsp)
Salt to taste
Cooking oil

Preparation:

  • Take a pan add 2tsp oil,cumin seeds, mustard seeds ,green chillies ,Onion cook until the onions are transparent.
  • Boil eggs remove the shell, make vertical cuts on the egg using a knife and keep aside.
  • Add ginger garlic paste , turmeric , tomatoes , salt to taste, red chilly powder , garam masala and cook for 2-3 mins.
  • Add milk cook for a min then add eggs and coconut powder cook it 2-3 mins.
  • Garnish with cilantro.

Egg Fried Rice

Ingredients:
2 Cups Rice
3 Eggs
1/2 cup chopped carrot
1/2 cup chopped green beans
Finely chopped ginger
Finely chopped garlic
Chopped Onion
2-3 Green chillies
1tsp Soy sauce
Salt to taste
Black Pepper Powder
Cooking oil

Preparation:

  • Cook the rice with 1:11/2 ratio of water.
  • Take a pan add 1tsp oil beat the eggs add a pinch of salt & pepper and prepare scrambled egg out of it and keep it aside.
  • Take a large pan add 2tsps oil , cumin seeds, chopped onion ,chopped ginger , chopped garlic and cook it for 2mins.
  • Then add chopped carrot , chopped green beans , salt , 1tsp soy sauce and fry for 2-3mins.
  • Add the scrambled egg and cook for a min then add rice and pepper powder and cook for 2 mins.
  • Egg fried rice is ready to serve.

Egg Puffs


Ingredients:
pepperidge farm puff pastry Sheets
Boiled Eggs
Salt to taste
Pepper powder
Red chilly powder
Pepperidge Farm Puff Pastry Sheets : You get 2 sheets in one box,you can make 9 puffs in one sheet.
Preparation :
  • Boil 4 eggs in water for 15 mins, peal the shell of eggs and make it in to two halves vertically.
  • Mix 1tsp of red chilly powder, 1/2 tsp of black Pepper powder and Salt to taste.
  • Sprinkle the mixture on the egg.
  • Allow to thaw the frozen Pepperidge farm puff pastry sheetsfor about 20 mins.
  • Open the sheet and cut into 9 eaqual parts and place the half eggs diagonally with flat end facing the sheets.Join the other diagonal ends around the egg.
  • Pre heat the oven at 400 degrees for 5 mins and place the Egg puffs on the Aluminium foil with enough space in btw the puffs.
  • Bake the puffs for 20 mins in the oven at 350 degrees ,when they are golden brown puffs are ready to serve.
