Spinach Soup


Ingredients:
Spinach (2 bunches)
Water Cress (1 bunch)
Potato (1 medium potato)
Onion (1 medium onion)
Salt to taste
Pepper powder

Preparation:

  • Heat the pan with butter or oil(1tbs),add chopped potato and onions fry them until they are translucent.
  • Add salt and crushed pepper.
  • Add watercress and spinach into the pan and let it cook for 5 mins.
  • Blend the mixture into fine paste by adding hot water.If you want the soup thick add less hot water.
  • Serve the soup hot with little sour cream on top or yogurt to go healthy.

Creamy Potato Soup


Ingredients:
Dry basil ( 1tbsp)
Shredded Cheese( 1 cup)
Butter ( 1/2 stick )
Red Potatoes ( 5-6 small)
Celery ( 2 sticks)
Carrots ( 2 )
Onion ( 1/2 )
Garlic paste ( 1 tsp)
Heavy cream ( 2 cups)
Chicken broth or Veg broth ( 5-6 cups)
Salt to taste
Black pepper ( 1/2 tsp)

Preparation:

  • In a pan add butter,onion,carrot, celery ,basil , garlic paste, potatoes and salt to taste ,cook for 3 mins.
  • Add Chicken broth or Veg broth and cook for 10 mins then add heavy cream and cheese.
  • Cook for 4-5 mins ,sprinkle fresh black pepper and Creamy potato soup is ready to serve.

Aloo Chaat

Ingredients:
2 Potatoes
Tomato Sauce
Green chutney
Pepper powder (1/4 tsp)
Chat masala (1/2 tsp)
Salt to taste
Cumin powder (1/4 tsp)
Sugar (1tsp )
Haldirams Mixture ( 2tsps)
Apple or Pomegranate seeds (2tsps)
Yogurt (2tsps)

Preparation:

  • Boil the potatoes and peal them , Cut the Apples into small pieces and keep it aside.
  • Take the pealed potatoes and smash them, add pepper powder , chat masala , Salt to taste and Sugar.
  • Mix it well and make it as a patty and shallow fry on a pan in 1tbsp oil for 2 mins on either side.
  • In a small bowl mix yogurt and cumin powder,keep it aside.
  • Take the serving bowl , add the Aloo patty, fruit ( Apple or Pomegranate seeds), haldirams mixture , yogurt with cumin powder , tomato sauce and green chutney.
  • While eating break the aloo patty and mix it well with the chutney and yogurt and have it.

Fruit Tart (100th Post)


This is our 100th post , as 100 is a special number we were planning to do something special.Then i thought of preparing Fruit tart, my favorite dessert. Its quick and easy to prepare.

Ingredients :
1 Prepared graham pie crust, found on baking section in any grocery store
Vanilla or Lemon flavor instant pudding mix ( 1 Box)
Orange or lemon, zest ed ( 1 )
Oranges ( 1 can )
Peaches ( 1 can )
Blackberries ( 1 Pint )
Milk(1 1/2 cup)


Preparation:

  • Bake the crust for 5 mins in the oven at 350 degrees and take it out and let it cool.
  • Make the pudding as per the directions on the box , add the lemon or orange zest and let it stand for 5 mins.
  • Fill the pudding in the graham pie crust and decorate with your favorite fruits and whip cream (optional) , i have used oranges,peaches ,black berries.
  • Chill it and serve the fruit tart.

Sorakaya Chutney (Bottle gourd)

Ingredients:
Sorakaya (1 Big)
Green Chillies ( 3-4 )
Peanuts ( 1/2 cup)
Oil ( 2 tsp ) 
Tamarind ( 1 inch)
Cumin Seeds ( 1/4 tsp)
Cilantro to garnish
Garlic (2 cloves)

Preparation:

  • Peel out the skin on sorakaya and chop them into 1 inch cubes.
  • Dry roast the peanuts and blend them with salt and green chillies.
  • Heat the pan,add oil,cumin seeds,2 cloves of garlic,tamarind and chopped sorakaya.
  • Let it cook for 5-10 mins on medium heat with a lid on pan,until sorakaya is cooked.
  • Add cilantro and off the stove,let it cool down for 5 mins.
  • Blend the sorakaya with peanut paste into coarse paste or fine as you like and its ready.

Kichidi ( Pappu Biyyam)




Ingredients:
Rice ( 2 cups)
Channa dal ( 1/2 cup)
Green chillies ( 3 )
Cloves ( 2-3 )
Cinnamon 1 inch stick
Cardamom ( 2-3 )
Onion ( 1 )
Turmeric ( 1/4 tsp)
Ginger garlic paste ( 1/2 tsp)
Carrot ( 2 )
Potato ( 2 small )
Green peas ( 1/2 cup) ( Optional )
Salt to taste
Mint leaves ( 1/2 cup )
Cilantro ( 1/2 cup )

Preparation:

  • Soak rice and Channa dal in water for 15 mins .Cut the potato ,carrot onion into small pieces.
  • Take a pan add 2-3 tsp oil , cloves , cinnamon , cardamon , green chillies , onion and turmeric saute until onions are transparent.
  • Add ginger garlic paste , potatoes, Carrot , green peas ,Salt to taste ,Mint , Cilantro and cook for 3 mins.
  • Then drain out the water from the rice and dal and add the rice and Channa dal cook for 2 mins then add 4 cup of water.
  • Add 4 cups of water ( 1: 11/2 ratio ) and cook till done in the same pan or you can cook in electric rice cooker.
  • Garnish with finely chopped cilantro and its ready to serve.

Palak Paneer

Ingredients:
Spinach (2 bunches)
Paneer (6-8 cubes)
Green Chilly paste (3-4 chillies)
Onion (1 onion)
Tomato (1 seedless tomato)
Salt to taste
Oil
Cilantro

Preparation:
  • Boil water in pan,add spinach and let it cook for 5 mins off the stove before the color of spinach changes,drain the spinach and blend into fine paste.
  • Fry paneer blocks in 1 tbs oil for 3 mins until lightly brown on all sides.place them in bowl of water.before putting into the sauce pan squeeze water out of it properly this way your paneer will be soft.
  • Heat the pan,add oil ,2 cloves of garlic finely chopped,gram masala(1 bay leaf,2 cloves,2 cardamon,1 small Cinnamon stick) and fry them.
  • Add finely chopped onions,green chilly paste into the pan cook until onions are brown add turmeric and let it cook for 2 mins.
  • Then add tomato finely chopped seedless into the pan and let it cook for 5mins.
  • Add paneer blocks into the pan.
  • Add spinach paste into the pan and stir curry without breaking panner blocks.
  • Cook for another 5 mins,when spinach color changes darker your curry is ready.
  • Garnish with cilantro,goes well with Naan and Chapathi.

Schezwan Noodles

Ingredients:
Egg Noodles (1 pack)
Spring Onion (1 cup)
Chopped Carrot (1 cup)
Chopped Beans (1 cup)
Green Chilly paste (1/2 tsp)
Salt to taste
Chilly paste (1 tsp)
Schezwan sauce (1 tsp)
Soy sauce (1 tsp)
Cilantro
Preparation:
  • Boil water in pan,add 1 tsp oil,salt and noodles until boil and soft.
  • Heat the pan,add oil,chopped spring onions,green chilly paste until fry add turmeric,carrot,beans until fry for 5 mins.
  • Add chilly paste,schezwan sauce and soy sauce stir the pan until all ingredients mix well.
  • Add noodles into the pan and stir well.
  • After 2 mins,garnish with cilantro and your schezwan noodles are ready to eat.

Corn Upma


Ingredients:
Corn (2 cups)
Red Chillies (1 chilly)
Green Chilly paste (2 chillies)
Onion (1/2 onion)
Salt to taste
Cilantro

Preparation:
  • Steam the corn in pressure cooker until soft.
  • Blend 3/4 of corn into coarse paste.keep 1/4 of corn as it is.mix all-together before putting into the pan.
  • Heat the pan,add oil,cumin seeds,mustard seeds,onions,red chillies,green chilly paste fry them until lightly brown.
  • Add corn paste into the pan and add salt, stir the corn until its well mixed together with all ingredients.let it cook for 5 mins.
  • Garnish with cilantro and its ready to eat.

Bow Tie-Veg pasta


Ingredients:
Bow tie-pasta ( 2 cups )
Red onion ( 1/2 )
Carrot ( 1/2 cup)
Garlic ( 2 cloves )
Green peas ( 1/2 cup )
Olives ( 5-6 )
Fresh basil ( 1/2 cup ) or Dry basil ( 1tsp )
Pasta Sauce (RAGU) ( 3-4 tbsp)
Crushed red chillies ( 1 tsp )
Black pepper (1/2 tsp )
Parmesan cheese (Optional) ( 2tsp )
Olive oil 2 tsps
Salt to taste

Cilantro to garnish

Preparation:

  • Boil pasta in enough water for 8-10 mins,drain the water and keep it aside.
  • Take a pan add Olive oil , finely chopped garlic , chopped red onion, crushed red chillies and fry it for 2-3 mins.
  • Add sliced carrot, green peas, sliced olives , basil and fry for 2 mins.
  • Add pasta sauce , black pepper and salt to taste and fry for 2-3 mins .
  • Add the cooked pasta and mix gently and cook for a min.
  • Sprinkle Parmesan cheese and garnish with chopped cilantro.

Veg Noodle Soup



Ingredients:
Pasta- 1 cup
Finely chopped Onion ( 1/2 )
Finely chopped Carrot ( 2 )
Finely chopped Cabbage ( 1/2 cup)
Finely chopped Green beans (1/2 cup)
Finely chopped Garlic (1 clove)
Finely chopped Celery (1/2 cup)
Finely chopped Potato ( 1 small )
Tomato Puree ( 1 cup )

Fresh basil (1/2 cup ) or dry basil (1 tsp)
Salt to taste
Red chilly powder ( 1/2 tsp)
Pepper powder - ( 1/4 tsp)
Water or Veg stock ( 2 cups )
Oil - 2 tsp
Cilantro

Preparation:

  • Heat oil in a pan and saute pasta, onions, celery and garlic for 2 mins.
  • Add all the other vegetables and cook for 2-3 mins.
  • Add Salt , Red chilly powder ,basil ,Tomato puree and let it boil.
  • Then add water or Veg stock,pepper powder and cook for 10 mins ,mix them well for every 3-4 mins.
  • Garnish with cilantro and serve hot.
Note: Skip few vegetables if you don't have.

Oats Upma


Daily we have oats with milk ,raisins,walnuts or fruits it tastes sweet ,so i tried something spicy with oats .This is a healthy dish , its the same recipe of poha upma we are using Oats instead of poha.

Ingredients:
Old fashioned Oats (2 cups)
Channa dal (2 tsp)
Peanuts ( 2 tbs)
Oil ( 2 tsp )
Salt to taste
Cumin seeds(1/4 tsp)
Green chillies ( 2-3 )
Carrot ( 2 )
Onion (1/2)
Lemon ( 1/2 )

Cilantro

Preparation:

  • Dry roast the Oats in a pan for 2-3 mins and keep them aside.
  • Heat the pan,add 2 tbs oil,cumin seeds, Channa dal, peanuts, chopped chillies, chopped Onion, and fry them until onions are slightly brown.
  • Add carrot and salt to taste and cook until carrots are soft.
  • Then add the roasted Oats and sprinkle 1/2 glass water on it and mix it well.
  • Cook it for 2-3 mins,squeeze lemon ,garnish with cilantro and enjoy the dish.

Jal Jeera



Cumin powder and amchur give this drink a lovely tangy flavour.

Ingredients :

Roasted Cumin powder ( 1 tbsp )
Fresh mint leaves paste ( 2 tsp )
Fresh Coriander leaves paste (1/2 tsp)
Dry mango powder (amchur) ( 1 tsp )
Lemon juice ( 2 tbsp )
Sugar ( 1 tsp )
Water ( 4 glasses)


Preparation:
In a blending jar add cumin powder, mint leaves paste, coriander leaves paste, amchur, lemon juice ,sugar , 1 glass chilled water and blend them.
Then add 3 glasses of chilled water ,mix it well and Serve chilled.


Corn Salad

Ingredients:
Frozen Corn Kernels( 2 cups)
Finely chopped Red bell pepper ( 1 )
Finely chopped Red onion (1/4 cup)
Finely chopped Cilantro ( 2 tsps)
Cumin powder (1/2 tsp)
Hot Sauce ( 2tsps)
Salt to taste
Pepper powder ( 1/2 tsp )
Vinegar or Lime juice ( 1 tsps)
Olive oil ( 2 tbsp )

Preparation:

  • Steam corn in a cooker for 12-15 mins.
  • Take a mixing bowl add the steamed corn and all the other ingredients,
    mix them gently and serve.

Pachi pulusu



This is a traditional telangana dish , goes well with rice and dal .

Ingredients:
Tamarind
Finely chopped Onion(1/2 onion)
Oil (2 tbs)
Red chillies(1 chilly)
Green Chillies(2 chillies)
Curry Leaves(4-5 leaves)
Ginger garlic paste(1 tsp)
Salt to taste
Cilantro




Preparation:
  • Soak tamarind in water for 20-25 mins.Squeeze juice from tamarind.
  • Fry green chillies without oil and make them into fine paste.
  • Pour the tamarind juice in separate bowl,add onions,salt,green chilly paste and ginger garlic paste and mix well.
  • If your tamarind juice is sour you can add sugar(1tsp).
  • Heat small pan add oil,mustard seeds,cumin,red chillies .when red chillies are fried,off the stove and add turmeric and curry leaves.We call this process as popu.
  • Pour this popu into the juice we mixed before and mix it well.
  • Garnish with cilantro then ready to serve.

Palak Dal

Ingredients:
Toor Dal (1 cup)
Channa Dal (1/4 cup)
Palak (1 bunch)
Green chillies (3 chillies)
Onions (1 whole)
Salt to taste
Red chillies (2 chillies)
Cilantro

Preparation:

  • Pressure cook Dal, palak,green chillies for 2 whistles.
  • Heat the pan,add oil,mustard seeds,cumin seeds,red chillies,onions and fry them until golden brown add turmeric powder,chopped garlic and salt to taste.
  • Add pressure cooked dal into the pan and stir the dal so that all the ingredients.
  • Let it cook for 5 mins,add cilantro and squeeze half lemon into the dal to get tang if you like.

Lettuce wraps (Indian style)

This is a very famous appetizer in PF Chang's (Chinese restaurant) , so i tried the same recipe with Indian touch.

Ingredients:
Ground Chicken

Lettuce
Onion(1 whole)
Lemon( 1 lemon)
Green Chillies(3 chillies)
Red chilly powder(1/2 tbs)
Gram masala(1/2 tsp)
Coriander powder(1tbs)
Salt to taste
Ginger garlic paste(1 tbs)
Cilantro
Preparation:


  • In a bowl,take ground chicken,salt to taste,red chilly powder,coriander powder,gram masala and lemon (1/4 lemon juice)mix them well and allow it to marinate for 20 mins.
  • Heat the pan, add oil,cumin seeds,onions,green chilli's.when onions are golden brown, add turmeric and ginger garlic paste.
  • Add marinated ground chicken into the pan and stir the curry so that all ingredients are mixed well and allow it to cook for15 mins.when chicken is cooked well add cilantro.
  • Take lettuce, add cooked chicken,chopped onions,sprinkle salt(1 pinch) ,squeeze lemon juice as required,then fold the lettuce as shown in figure above and enjoy the dish.

Banana Lassi

Ingredients:
Sliced bananas ( 2 )
Plain yogurt (1 1/2 cup)
Water ( 2 cups)
Sugar or Honey ( 2-3 tsp )
Crushed cardamom seeds (1/2 tsp)
Ice cubes ( 4 )

Preparation:
Add all the ingredients in a blending jar and blend it smooth.

Dahi Vada

Ingredients:
Urad dal
Green chilly paste
Salt to taste
Baking soda
Yogurt
Cooking oil
Tamarind chutney
To Garnish: Chat masala , cumin powder , red chilly powder , cilantro

Preparation:
  • Soak 2 cups of urad dal for 6hrs or overnight.
  • Grind the soaked urad dal into fine batter , add salt to taste , 2tsps green chilly paste and 1/4 tsp baking soda.add very little water to grind the batter,mix it well and keep it aside for 20 mins.
  • In a pan add enough oil to deep fry the vada and heat it.
  • Gently mix the batter before use,apply little oil to your hands and place tablespoon full of batter in your hand and make the batter in the shape of vada and drop it in the oil carefully.
  • Fry on medium flame till crispy and light brown,drain excess oil and cool for 5 mins.
  • Soak the vadas in water for 15 mins,gently press each vada to drain off the excess water.
  • Immerse the vadas in beaten yogurt for 10mins,garnish with Cumin powder , chat masala, red chilly powder and cilantro.
  • Serve with Tamarind chutney.

Tamarind chutney
Method 1
Ingredients:
Dates Paste (you can get from any Indian stores)
Tamarind paste
sugar 1tsp

Procedure:
Soak the tamarind for 10-15 in water and make a paste out of it.
Take a bowl add 2-3 tsps of date mix or paste,1/4 cup tamarind paste and 1tsp sugar.
mix them well

Method 2
Ingredients:
Chat masala 2tsp
tamarind paste 1/2 cup
Sugar 1/2 cup

Procedure:
Soak the tamarind for 10-15 in water and make a paste out of it.
Take a bowl add 2tsp of chat masala,1/2 cup tamarind paste,1/2 cup sugar and mix them well.

Pineapple Cake

Ingredients:
All-Purpose-Flour (2 cups)
Sugar (1 1/4 cup)
Butter (1/2 cup)
Pineapple essence (1 tsp)
Baking powder (3 tbs)
Eggs (4 egg whites)
Milk (1/2 cup)
Pineapple chucks (1/2 cup)

Preparation:
  • Preheat oven to 350F.Grease 9 inch round cake pan with butter.
  • In large bowl,mix butter and sugar with electric mixer until light and fluffy then add pineapple essence and milk.
  • Add egg whites and mix them until all wet ingredients are mixed well together.
  • Add flour and baking powder into the bowl of wet ingredients and mix until flour is moist.
  • Add finely chopped pineapple into the cake batter and mix well.
  • Pour batter evenly into greased cake pan.
  • Bake for 30-35 mins.You can check the cake by inserting toothpick in middle comes out clean.
  • Let the cake cool down completely before enjoying the cake.

Chilly Chicken



Ingredients:
Chicken
Capsicum
Onion
Red chillies
Chopped ginger
Chopped garlic
Corn flour
Black pepper powder
Egg
Soy Sauce
Red chilly Sauce
Chicken stock or Veg stock
Vinegar
Spring onion
Cilantro
Salt to taste
Cooking Oil

Preparation:

  • Cut the Chicken , Capsicum , Onion into cubes and keep them aside.
  • Marinate chicken with 2 tbsps of cornflour, salt to taste , 1/2 tsp crushed black pepper , 1 egg , 1 tbsp soy sauce and keep it aside for 15 - 20 mins.
  • In a pan add enough amount of oil to deep fry the chicken,fry the chicken pieces till they are golden brown don't over cook the chicken.
  • Heat 1 tablespoon oil in a pan add chopped ginger and garlic and mix for a min then add red chillies and onion and cook until onion is golden brown.
  • Add capsicum and cook for a min , then add 2tbsps soy sauce , 2tbsp red chilly sauce and cook for 2 mins.
  • Add 1 and 1/2 glass of veg stock or chicken stock or water and bring it to boil.
  • In a small bowl add 1/2 cup of water and 1 tbsp of corn flour and mix them well.
  • Add chicken and salt to the vegetables and mix them well.
  • Add 1tbsp vinegar , Corn flour and water mixture and let it cook for a 2mins.
  • If you want gravy you can add some more stock or water and cook for a min.
  • Garnish with spring onion and cilantro,Chilly chicken is ready to serve.

Zucchini Curry

Ingredients:
Zucchini (2 medium size)
Onion (1 whole)
Green Chillies (3 chillies)
Salt to taste
Coriander powder(1 tbs)
Cilantro

Preparation:
  • Peel the skin on zucchini and finely chop.
  • Heat medium size pan with oil,add cumin seeds and mustard seed onions,green chillies.
  • When onions are fried add turmeric powder and stir the curry.
  • Add ginger garlic paste and let it cook for 2mins and add zucchini stir the curry well to mix all the ingredients and cover with lid for 5 mins
  • Add salt to the curry and stir once again.
  • When zucchini is cooked add coriander powder,cilantro and let it cook for another 2 mins and your curry is ready.

Samosa

Ingredients :
Spring roll sheets
Onion ( 1 )
Potatoes ( 3-4 )
Green peas ( 1/2 cup)
Fennel seeds (optional)( 1 tsp )
Red chilly powder ( 1tsp )
Salt to taste
Turmeric powder ( 1/8 tsp)
Cooking Oil

Preparation:

  • Take a pan add 2tsps oil , chopped Onion,turmeric and cook for 2-3 mins.
  • Add chopped potatoes cook for 3 mins then add fennel seeds ,salt to taste , red chilly powder and green peas.
  • Cook until potatoes are soft and keep the curry aside and let it cool down.
  • Thaw the spring roll sheets for 20 mins and make samosas out of the sheets fill the curry and deep fry them in the oil.
  • To paste the samosas add 2 tsps of corn flour in 2-3 tsps of water.

Minestrone Soup

Ingredients:
Onion (1 whole)
Cabbage(1 cup of chopped cabbage)
Carrot (1 cup carrot)
Potato (1 cup)
Celery(1 cup)
Garlic(2 cloves)
Oil (1 tsp)
Butter (1 tsp)
Tomato (3 tbs)
Veg stock/chicken stock (1 tin)

Preparation:

  • Heat medium size pan, with butter and oil add garlic and all vegetables(onions,cabbage,potato,celery,carrot).
  • Let all vegs cook for 5 mins,then add tomato paste with little water and let cook for 3 mins.
  • Add salt and pepper and stir the soup.
  • Add veg stock into the vegs and stir the soup and let it cook for 10mins.

Potato Kurma

Ingredients:
Potatoes (3-4)
Tomatoes (2)
Green peas (1/2 cup)
Onion (1)
Cloves (2-3)
Cinnamon (2 sticks)
Cardamom (Elachi) (2-3)
Cumin seeds (1/4 tsp)
Mustard seeds (1/4 tsp)
Ginger garlic paste (1/2 tsp)
Turmeric (1/8 tsp)
Coconut powder (1 tsp)
Red chilly powder (1/2 tsp)
Garam masala (1/8 tsp)
Salt to taste
Cilantro to garnish

Preparation:

  • Cut the potatoes and tomatoes into small cubes and keep them aside.
  • Take a small pressure cooker , add 2tsps oil then add cumin seeds , mustard seeds, cloves, cardamom, Cinnamon and roast them for a min.
  • Add the onion ,turmeric and ginger garlic paste , Salt to taste and fry for a min then add potatoes,let them cook for a min.
  • Add tomatoes and green peas after a min add 1/2 glass water and close the cooker lid with the whistle after one whistle turn off the stove.
  • Let it cool down and then open the lid switch on the stove add red chilly powder , coconut powder , garam masala cook for a 2 mins.
  • Garnish with cilantro and your potato kurma is ready to serve.
  • It goes well with Fried rice, lemon rice and chapati.

Capsicum Rice




Ingredients :
Green capsicum (1/2)
Red capsicum (1/2)
Rice (1cup)
Onion (1/2)
Green chillies(2-3)
Cumin seeds(1/4 tsp)
Cashew nuts or Peanuts
Channa dal (1tsp)
Urad dal (1tsp)

Sliced ginger (1/2 tsp)
Garam masala (1/4 tsp)

Preparation:
  • Cook the rice and keep it aside.
  • Cut the green,red capsicum into small cubes and keep them aside.
  • Take a pan add 1tbsp oil, cumin seeds,Channa dal ,Urad dal ,cashew nuts or peanuts, onion , green chillies and sliced ginger.
  • Let it cook until onions are golden brown then add capsicum ,salt and let it cook for 2-3 mins then add garam masala and cook for a min.
  • Add cooked rice and mix it well and garnish with cilantro.

Green Beans Fry

Ingredients:
Green beans
Channa Dal
Onions
Green Chillies
Oil
Salt to taste
Ginger garlic paste
Cilantro

Preparation:
  • Finely chop green beans,onions,green chillies and cilantro.
  • Heat medium size pan,pour 3tbs oil,add cumin seeds,mustard seeds when mustard seeds pop up,add green chilli's,onions and Channa Dal.(for one cup of chopped green beans add 1/4 cup of Channa)If you like to add more or less its up to you.
  • Fry all together for 5 mins and add turmeric powder and ginger garlic paste and fry them for 2 more mins.
  • Add chopped green beans,stir the curry so that all the ingredients are mixed well.
  • Let it cook for 5 mins,add salt and stir the curry once again and let it cook for another 5 more mins or until beans are cooked.
  • Add cilantro to the curry and your green bean curry is ready to eat.

Curry Puffs


Ingredients:
Pepperidge farm puff pastry sheets
Chopped Onion
Chopped carrot
Chopped Green beans
Chopped potato
Green Peas
Amchur powder
Salt to taste
Red Chilly powder

Pepperidge Farm Puff Pastry Sheets : You get 2 sheets in one box,you can make 9 puffs in one sheet.


Preparation:

  • Take a pan add oil ,Chopped Onion,Chopped carrot,Chopped beans,Chopped potato
    Green beans,Green Peas,Amchur powder,Salt to taste and Red Chilly powder.
  • Cook it for 8-10 mins and Keep the curry aside.
  • Allow to thaw the frozen Pepperidgefarm puff pastry sheets for about 20 mins.
  • Open the sheet and cut into 9 equal parts and place the curry in the middle add and fold the other end.
  • Pre heat the oven at 400 degrees for 5 mins and place the curry puffs on the Aluminium foil with enough space in btw the puffs.
  • Bake the puffs for 20 mins in the oven at 350 degrees and take out from the oven,Its ready to serve.

Cauliflower Egg Curry

Ingredients:
Cauliflower(1 whole)
Oil (3tbs)
Onion (1 whole)
Eggs (3 eggs)
green chilly (3 chillies)
Red chilly powder (1/2 tsp)
Salt to taste
Coriander powder(1tbs)
Cilantro

Preparation:
  • Cut the cauliflower into medium size pieces and soak them in salt water fro 5 mins.
  • Heat large pan, with 2tbs oil add cumin seeds,mustard seeds ,green chillies,onions and fry them until brown add turmeric powder and stir for 2mins .
  • Add chopped cauliflower and stir the curry thoroughly and cover the pan with lid for 5 mins until cauliflower is cooked.
  • Add salt and red chilly powder and stir once again.
  • Beat 3 eggs into the curry and mix them on high heat until well cooked,simmer the stove to medium heat and cook until eggs are well cooked.
  • Add coriander powder and stir the curry for 5 mins.
  • Garnish with cilantro and your curry is ready to serve.
  • Goes well with chapathi and rice.

Vegetable Parata

Ingredients:
Wheat flour (1 cup)
Shredded Cabbage ( 1/4 cup)
Shredded Carrot (1/4 cup)
Boiled potatoes (1/2 cup)
Boiled green peas (1/4 cup)
Chat masala ( 1/2 tsp)
Cumin seeds (1/2 tsp)
Salt to taste
Red chilly powder (1/2 tsp)
Cooking Oil

Preparation:

  • Boil the potatoes , peal them and mash them .
  • Boil the green peas and mash them and keep them aside.
  • In a bowl add wheat flour , a pinch for salt and water , mix it well and make a proper dough to make paratas.
  • Take a pan add 1 tsp oil , shredded carrot , shredded cabbage , mashed green peas and cook for 2 mins.
  • In a bowl add the mashed potatoes , cumin seeds , cooked vegetables , chat masala, red chilly powder and salt to taste.
  • Mix it well and make small balls out of the vegetable mixture.
  • Make a small size chapathi with the wheat dough and place the vegetable stuffing in the middle.
  • Close it from all sides and make parata , sprinkle wheat flour if the stuffing comes out.
  • Take a chapathi pan add 1tsp butter and roast the parata for 2 mins on either side.

Hot & Sour Veg Soup

Ingredients:
Finely chopped garlic (1tbsp)
Finely chopped ginger (1tbsp)
Finely chopped Onion (1 cup)
Finely chopped celery (1/4 cup)
Finely chopped Carrot (1/4 cup)
Finely chopped green beans (1/4 cup)
Finely chopped cabbage (1/2 cup)
Finely chopped cauliflower(1/4 cup)
Finely chopped capsicum (1/4 cup)
Finely chopped spring onion.
Soy Sauce ( 2-3 tbsp)
Chilly Sauce(2-3 tbsp)
Vinegar
Corn starch (2-3 tbsp)
Pepper powder
Vegetable stock
Cooking oil

Preparation:
  • Take a pan add 2tsps oil , garlic , ginger , celery ,onion fry for a min.
  • Add carrot , green beans ,cabbage , capsicum , cauliflower fry for 2 mins.
  • Mix Corn starch in 1/2 cup water and keep aside.
  • Add 3-4 cups of vegetable stock ,Salt to taste, Chilly sauce ,Soy sauce,Vinegar, let it boil.
  • Add the corn starch water and mix it well add pepper powder, let it boil for 2-3 mins.
  • Garnish with spring onion,Hot & Sour soup is ready to serve .

Serve with : Green chillies in vinegar , Tomato ketchup , Chilly Sauce , Soy sauce.

Vegetable stock preparation:

  • Boil any vegetables , 2-3 whole garam masala in water for 5 mins,remove the vegetables.
  • The water is vegetable stock , you can freeze the stock in ice tray and use the veg stock blocks when ever you make soups.

Pesarattu


Ingredients:
Green Moong Dal (1 cup)
Rice (1/2 cup)
Salt to taste
Green chillies(3 chills)
Chopped Ginger(1 tbs)
Onion
Cilantro

Preparation:

  • Soak green whole moong dal and rice for 6hrs or overnight.
  • Grind the soaked dal,green chillies,onion,ginger,cumin seeds and salt into fine paste.
  • Heat dosa pan,add oil pour the batter in round shape like dosa.
  • Sprinkle chopped onions,chopped cilantro on top.
  • Wait till brown color and its ready to serve.
  • It goes well with sweet mango chutney or coconut chutney.

Tomato Egg Curry

Ingredients:
Tomatoes 4-5
Eggs 3-4
Chopped onions
Coconut powder (1tsp)
Garam masala powder (1/4 tsp)
Turmeric (pinch)
Cumin seeds (1/4 tsp)
Mustard seeds (1/4 tsp)
Milk (1/2 cup)
Ginger garlic paste (1/2 tsp)
Red chilly powder (1/2 tsp)
Salt to taste
Cooking oil

Preparation:

  • Take a pan add 2tsp oil,cumin seeds, mustard seeds ,green chillies ,Onion cook until the onions are transparent.
  • Boil eggs remove the shell, make vertical cuts on the egg using a knife and keep aside.
  • Add ginger garlic paste , turmeric , tomatoes , salt to taste, red chilly powder , garam masala and cook for 2-3 mins.
  • Add milk cook for a min then add eggs and coconut powder cook it 2-3 mins.
  • Garnish with cilantro.

Egg Fried Rice

Ingredients:
2 Cups Rice
3 Eggs
1/2 cup chopped carrot
1/2 cup chopped green beans
Finely chopped ginger
Finely chopped garlic
Chopped Onion
2-3 Green chillies
1tsp Soy sauce
Salt to taste
Black Pepper Powder
Cooking oil

Preparation:

  • Cook the rice with 1:11/2 ratio of water.
  • Take a pan add 1tsp oil beat the eggs add a pinch of salt & pepper and prepare scrambled egg out of it and keep it aside.
  • Take a large pan add 2tsps oil , cumin seeds, chopped onion ,chopped ginger , chopped garlic and cook it for 2mins.
  • Then add chopped carrot , chopped green beans , salt , 1tsp soy sauce and fry for 2-3mins.
  • Add the scrambled egg and cook for a min then add rice and pepper powder and cook for 2 mins.
  • Egg fried rice is ready to serve.
